Bourbon Barrel Aged Stout

Petite bouteille de355ml avec carton autour du col. Merci Patrick. Un liquide visqueux remplis mon verre. Un rond de mousse beige se forme sur les parois. Un premier nez simple de chocolat, un second de cerise, canneberge d’alcool et de vanille. Une bouche ferme avec des saveurs de Jack, de chocolat, de grain grillé. La texture est moyenne avec du piquant sur la langue. Une finale aigre détonne.

(Merci à robinvboyer pour la bouteille) Un liquide presque noir qui ne montre aucune construction mousseuse et aucune véritable effervescence. Le premier nez est fortement dominé par Jack. Le second et les suivants montrent, heureusement, de belles qualités chocolatées et de légères vapeurs fruitées. Sur les papilles, je constate une légère aigreur. Les malts sont ici malheureusement mangés par la barrique. Je ne trouve pas cette profondeur chocolatée présente dans les arômes. Au palais, le liquide a un corps un peu aminci. Le pétillement est presque inaudible. La texture me surprend par son côté crémeux. La finale est principalement l’affaire du fût et de ses notes boisées. Décidément, cette bière ne possède pas une structure assez solide pour être capable de supporter une année de vieillissement dans un fût de Jack. Ceci dit, ce stout, qui n’est sûrement pas une totale réussite, est loin d’être un échec retentissant.

Bottle (341 ml). Unlabeled. From TheJester, thanks! Black with a small disappearing beige head and little lacing. Aroma is of chocolate (mainly), cranberries, bourbon, vanilla and roasted malt. Taste is moderately sweet with chocolate, cranberries, vanilla, bourbon, roasted malt and light bitterness. Medium to full body. Low carbonation. Oily mouthfeel. Hard to drink, not because it’s too heavy, but mainly because of the combination of sweetness, cranberries and barrel treatment. Still interesting.

[Bottle (355ml) shared with HogTownHarry, GregClow, jercraigs & mabel -- c/o GregClow] Pours a very dark brown with no head, slightly oily looking. Aroma of roasted malt, light hops, chocolate, a touch of metal and some wood. Slightly watery flavour of chocolate and roasted malt along with some wood and a bit of alcohol. Average to medium bodied. Not great, but pretty good.

From the Brewery website: Our Double Chocolate Cranberry stout (Winter Beard) is a rich and sturdy brew with roasted dark chocolate malts, rfeal cocoa, 70% dark chocolate, and locally harvested cranberries. We decided to age a very small amount of our 2011 Winter Beard in Tennessee Whiskey barrels for just over a year. This is the result. We hope you enjoy it as much as we do. Pours black as oil with no head and only a slight ring of off-white around the edge of the glass. Aroma is large. Big booze and vanilla notes from the barreling. Chocolate, a sweet/fruity/tartness from the cranberries, and a hint of roasted malts as well. Very nice. Taste is a solid bitter, a hint of tartness, and a roasty, chocolate, coffee aftertaste. Mild alcohol warmth and vanilla flavour mixed in as well. Medium-full body with a low-medium carbonation. Oily/slick in the mouth but with a slightly creamy feel providing a good drinkability. Goes down smooth but definitely a sipper. Not as sweet as others I have tried recently. Overall really good. A fantastic aroma mixed with a solid, big bitter, flavour. Well worth the drive to Muskoka. Just make sure to grab a few. You won’t be sorry! Cheers!

bottle from the brewery. black pour, small beige head. Aroma is all barrel, with some vanilla, and some lettuce like vegetable aroma. as it warms, the vanilla, and barrel just dominate, and the base beer is completely lost. I’m having a hard time getting much roast, or coffee from the base beer, and the cranberry for sure is gone. I’m thinking the base beer wasnt beefy enough for the barrel ageing. The finish is quite boozy, with some touches of light roast, and more vanilla, barrel. this isnt a bad beer, but it is a barrel bomb.

341 mL bottle from the brewery. Looks the right colour, but no head. The aroma is all barrel. Maybe some faint roast. Big barrel in the aroma, but the original beer is a little more present - you can actually taste a little cranberry. Maybe too much cowbell on this one.

UPDATED: DEC 26, 2013 2013-11-29. Dark brown body head small tan head. Aroma is fruity, with a moderate whiskey quality. Flavour is interesting sort of whiskey like character with a nice fruity mix. Average bodied palate, carbonation. Less intensely whiskey character than previous sample but it still dominates the overall impression quite a bit. 7/3/7/3/14-15 Bottle shared by GregClow

2013-05-31. Black body nice tan head. Aroma is dryish, lightly woody and boozy. Light roast. Flavour is dry, fairly barrely with a good amount of oak and modest bourbon, light roast. Average bodied palate, modest carbonation. Decent but just okay, the base beer can’t quite support the level of barrel standing on top of it. 7/4/7/3/14 Bottle at Mondial de la Biere 2013, Montreal
