Our Double Chocolate Cranberry stout (Winter Beard) is a rich and sturdy brew with roasted dark chocolate malts, rfeal cocoa, 70% dark chocolate, and locally harvested cranberries.
We decided to age a very small amount of our 2011 Winter Beard in Tennessee Whiskey barrels for just over a year.
This is the result. We hope you enjoy it as much as we do.

---341ml. Bottle from Brewery drank on Nov 3, 2013. Pours black as oil with no head and only a slight ring of off-white around the edge of the glass.
Aroma is large. Big booze and vanilla notes from the barreling. Chocolate, a sweet/fruity/tartness from the cranberries, and a hint of roasted malts as well. Very nice.
Taste is a solid bitter, a hint of tartness, and a roasty, chocolate, coffee aftertaste. Mild alcohol warmth and vanilla flavour mixed in as well.
Medium-full body with a low-medium carbonation. Oily/slick in the mouth but with a slightly creamy feel providing a good drinkability. Goes down smooth but definitely a sipper. Not as sweet as others I have tried recently.
Overall really good. A fantastic aroma mixed with a solid, big bitter, flavour. Well worth the drive to Muskoka. Just make sure to grab a few. You won’t be sorry! Cheers!

Bottle - boozy bourbon, vanilla and chocolate. Jet black with no head. Bourbon notes, light cranberry and roasted malts. Too much bourbon and fruit, tastes likes the bad Christmas boozy fruit chocolates.

Mild hop presence, a bit of sweetness and some coffee is what I get out of it from the smell. Taste is coffee with a bit of sweetness right up front, the booze is over whelming and almost kills the any flavour.

Exceptional beer. My favorite beer for the Winter of 13/14. Aroma warm firm smell of bourbon; balances well with the notes of cocoa and dark cherry. Palate was full bodied and smooth. The bourbon finish was perfect. I was fortunate to try this the same evening as the Winter Beard on cask. I fully enjoyed this bear and cannot wait to get some of the next batch.

A deep dark stout with a thin mocha head. In aroma, sweet sweet dark chocolate malt with light fruity notes and bourbon notes, alcohol warmth, very nice. In mouth, a sweet fruity chocolate malt with light grassy hops, licorice, alcohol warmth, very nice. OttBottShare March 2014.

March 14, 2014. 330mL bottle from brewery shop, purchased Fall 2013. Dark brown with no head. Chocolate, cherry and touch of sourness in aroma, hint of oak. Chocolate, vanilla, cherry, oak, bourbon flavours. Very smooth, but also sour -- wonder if I kept it too long in the cellar? Prefer the original Winter Beard.

Bottle from brewery, from crazy_cat_lady; thanks! Dark with no head. Aroma of bourbon, dark fruit, berry, and chocolate. Taste is sweet with vanilla berries, and chocolate. Body feels a little thin.

341 ml bottle at Maple Leaf Square Corks. Pours a dark brown with hints of ruby red with thin tan head. Aroma has lots of barrel, candy sugar, hints of cocoa and fruit. Flavour is also dominated by the barrel with bourbon, vanilla, sugar, cocoa and fruit. Average plus body. Solid.

Tasted at cellar temperature. Aroma is definitely sweetish, with cranberry and cherry notes. Also a little boozy. Appearance is very little carbonation, straight black in colour. Taste is good, cherry, coffee, bitter and sweet. Feel is a little thin, very big alcohol feel but not a real big body.
