Our Double Chocolate Cranberry stout (Winter Beard) is a rich and sturdy brew with roasted dark chocolate malts, rfeal cocoa, 70% dark chocolate, and locally harvested cranberries.
We decided to age a very small amount of our 2011 Winter Beard in Tennessee Whiskey barrels for just over a year.
This is the result. We hope you enjoy it as much as we do.

---341ml. Bottle from Brewery drank on Nov 3, 2013. Pours black as oil with no head and only a slight ring of off-white around the edge of the glass.
Aroma is large. Big booze and vanilla notes from the barreling. Chocolate, a sweet/fruity/tartness from the cranberries, and a hint of roasted malts as well. Very nice.
Taste is a solid bitter, a hint of tartness, and a roasty, chocolate, coffee aftertaste. Mild alcohol warmth and vanilla flavour mixed in as well.
Medium-full body with a low-medium carbonation. Oily/slick in the mouth but with a slightly creamy feel providing a good drinkability. Goes down smooth but definitely a sipper. Not as sweet as others I have tried recently.
Overall really good. A fantastic aroma mixed with a solid, big bitter, flavour. Well worth the drive to Muskoka. Just make sure to grab a few. You won’t be sorry! Cheers!

sample at mondial de la bière 2015, mtl. dark brown pour with a small beige cap offering some retention and lacing. obvious bourbon-soaked wood, milk chocolate - smooth but also mole mexican-like notes, spicy red fruits - fat cabernet sauvignon grapes, brandy/bourbon-flambéed red fruits, hint of tart red grape juice, warming booze,. light carbonation, medium body - oily; semi-sweet and woody-spicy finish. bourbon but also strong winey character - tart-ish. quite enjoyed this one!

Bottle from the brewery. Pitch black with only a hint of khaki head around the edge. Bourbon is prominent in the nose with vanilla, wood, dark chocolate and just a hint of the cranberry. Flavour is light sweet malt with bitter coffee and chocolate and some light tartness from the cranberry. Alcohol not quite hidden. Medium creamy mouth with very soft carbonation. Lots going on here.

Small bottle split 3 ways. Black pour. Lower carbonation and a small head. Big whiskey and roasted malt aroma. Corn up front, but this disappears as it warms and gives way to a nice balance of whisky, roasted malk, wood, and vanilla. Cranberry almost nil,though. Rich full body. Pair with a cigar.

17.02.2015. 0,355l Bottle at Corks Beer & Wine bar, Toronto. Tha name tags says it has an abv of 9%. Thanks for coming up with this one!! Very rich. Sweet vanilla bourbon aromas. Strong with good body. Flavours of dark malts. There is not so much flavours of hops, and its not very bitter. Dark malts, cold coffee, vanilla and Jack Daniels dominate. Very rich and good beer!!

black pour with some beige foam, nice lacing. nose is dark malts and whiskey. mouthfeel is nice could be more. flavor is good booze chocolate and some vanilla notes.

Bottle - boozy bourbon, vanilla and chocolate. Jet black with no head. Bourbon notes, light cranberry and roasted malts. Too much bourbon and fruit, tastes likes the bad Christmas boozy fruit chocolates.

Mild hop presence, a bit of sweetness and some coffee is what I get out of it from the smell. Taste is coffee with a bit of sweetness right up front, the booze is over whelming and almost kills the any flavour.

Exceptional beer. My favorite beer for the Winter of 13/14. Aroma warm firm smell of bourbon; balances well with the notes of cocoa and dark cherry. Palate was full bodied and smooth. The bourbon finish was perfect. I was fortunate to try this the same evening as the Winter Beard on cask. I fully enjoyed this bear and cannot wait to get some of the next batch.
