Our Mystic Saison transformed by barrel aging in Bourbon barrels. Aged over 6 months resulting in smooth oak flavors and hints of bourbon. 7.8% abv.

750mL Bottle, purchased at Provisions - Northampton, MA. The aroma belies my problem with this beer, old hops. Oxidized, herbal Euro hops hold most of the aroma, then finish packed with minerals. Across the tongue, a more complex and different beast, but I keep coming back to the slightly dill seed flavor of dusty old hops. Bourbon pokes its head in, and I really, really appreciate the balanced restraint here. Just the right amount of bourbon, but I donít know what itís adding to the Saison to make up for the loss of the dry-hop freshness. In general, I donít know what bourbon or barrel-aging would add to Saison, a style intended and best suited to be fresh, sprightly, a bastion of sunshine and grain in a glass. The bourbon/yeast interaction provides a succulent pineapple character, but in the finish my tongue is sickened with old hops. Iím grateful to have tried the experiment, but Iíll take my Saison un-barrel-aged please, unless itís going to get uproariously sour and wild.

Poured from bottle thanks ClarkVV batch 1 hazy golden minimal head. Aromas of bourbon caramel and cardboard. Taste is the same very boozy and oxidized. Maybe would have been better years ago.

750 ml bottle, thanks to ClarkVV on this one! Batch 1. Mildly hazy color, no head. Aroma is just bourbon and yeast.

Flavor is way past its prime. If the Brewer ever rebrews this I will give this another try. But right now it is cardboard and mild bourbon hints. To much oxidation, why did that happen? The bottle is only over a year old, why is there so much cardboard?

Thanks Clark. Sorry, but I donít like this. Aroma is spice and booze. Taste is straight up booze bomb and awfulness combined in a glass. NOPE.

Good clarity in this apricot colored golden, light amber beer. White head atop is fairly well retained.
Smells like, cardboard! Some bourbon spiciness, sharp, grainy alcohol and no saison character. Peach, caramel, heavy white pepper. Not saison-like.
Mild bourbon to begin, with heavy acidity and alcohol. Grainy, dry and very unbalanced. Booze and oxidation, nothing to say nicely. It was fridged but is just way way too old even after 2 years

750ml bottle shared by. ClarkVV. Thanks, Clark. 2014 bottle, batch 1. Mystic, what made you think that putting a saison in a bourbon barrel was a good idea? Well, gotta find out what this is all about. Pours orange brown with a greyish off white head. Aroma is lemon, funk, caramel, cardboard. Yeah, this is not good. Caramel, butter, lemon, oak and whiskey.

Retired beer from Clark. Split 18 ways. Bottle 120 of 85 in a shot glass. Looks like a watered down orange soda. burnt orange, 3 finger head...very dense. Herbal with a floral aroma, clove, some herbs spread around in the nose with honey and faint tropical fruit. Decent mouthfeel, not pushing any boundaries with a sweet finish. up front, saison yeast, really almost no bourbon or barrel character at all. Citrus, honey, yeast, kiwi. a little oatmeal.

Sampled from a bottle at WTWBA 2014 in Minneapolis. Hazy yellow pour. Soft light fruit with a hint of bourbon and wood. Interesting beer.

750ml bottle in a tulip. Pours hazy amber with a lacy, off-white head. Aroma of bourbon barrels, light spices and fruits, some caramel, and light hops. Flavor the same. Average texture. A good saison, but not something Iíd want to drink regularly.
