Our take on the Belgian farmhouse ales, saisons were traditionally brewed for refreshment during the summer months. Light in color, effervescent with a billowy, well-retained head — it is very dry and strongly aromatic with light pepper and pear overtones. Heavier in alcohol at 7% abv, it finishes clean and bright, with a very light bitterness. Saison is far more a tradition than a style. Made with wine yeast by French speaking people in the ‘grain belt’ of Europe, saison was brewed in winter to slake thirsts of farm workers in summer. We found that in many ways saison goes far beyond white wines that were in the minds of the old Wallonians. It can be as dry and crisp but far more variable. In Belgium, every farm house had its own saison, influenced by their very own farm and the grains available to them. For Mystic Saison we worked towards the essence of saison.

Bottle shared by dreadnaught33. Thanks Jonathan. The beer appears hazy and yellow, with a finger of white head. The aroma offers citrus, spice, malt, light alcohol. Good flavor, with a lot of citrus. Light to medium in body, with only a mild alcohol presence. Faint mustiness and funk. Easy to drink and pretty smooth. A good saison, I would have this again. Bottle... Hazy golden ale with a mid-sized, soapy, white head. Great retention. Spicy, herbal nose - white pepper is front and center. Medium to full-bodied with champagne-like carb. The bittersweet flavor is a mélange of toffee, herbs, roots and spices. Finishes malty, spicy and tongue-numbing. Thanks to biggsbowler for sharing this beer with the south Florida crew!

750ml corked and caged bottle courtesy of Doodler (thanks Scott) poured a hazy gold with a lasting off white head. Aromas of pear, yeast,pineapple, straw, spice and light banana., Palae was light bodied and crisp. Flavors of straw, yeast, pear, light spice and light pineapple with a crisp lingering fruity straw finish.

(750ml bottle during RBWG) cloudy/chunky light orange pour with excellent lacing. Nose of spices, orange peel, and lemon. Taste of spicy yeast, gold raisin, a bit of wheat, smooth, honey, creamy, oily body.

Bottled at the Festival of Farmhouse Ales. Orangish-yellow, quite dark, with a very fine, high head. Malty nose, a lot of biscuits, bread, a little citrus. Really similar to Saison Dupont. Flavor is grass, citrus, bread. Again, close to Dupont. Lacks the complexity and the crispness, but close and likewise very nice.

bottle at hf’s saison festival 2012. bright golden with a nice white head, decent retention. nice pale malts, fruitiness - pears, apples, along with their light sweetness. grassy hops - decent finish. very lively, almost prickly, medium body.

10 oz. snifter. Showed real clear yellow. Great retention. Weak nose of yeast and hops. Mouthfeel is lively. Spicy, slight clove, yeast... Decent yeast. Good. Ok to try.

Pours a hazy deep yellow with frothy white head. Took a bit to settle but that’s to be expected Aroma was highly fruity pears raisins and cinnamon apple Flavor was smooth and sweet easy to drink and very pleasing

750ml bottle from Julio’s. Pours a slightly hazy amber/yellow with a frothy white head. Took a bit to settle down. Light, sweet, fruity aroma with apples and pears. Some touch of honey, but light, not cloying. Flavor is same. Light palate with fizzy carbonation. Pretty good, although I would have preferred more funk.
