COMMERCIAL DESCRIPTION
La Folie Wood-Aged Biere, is our original wood-conditioned beer, resting in French Oak barrels between one and three years before being hand bottled, numbered and corked for your enjoyment. Brewmaster, Peter Bouckaert, came to us from Rodenbach – home of the fabled sour red. Our La Folie emulates the spontaneous fermentation beers of Peter’s beloved Flanders with sour apple notes, a dry effervescence, and earthy undertones.

Doing a vertical tonight, from ’’09 - ’13. Starting with the ’09, it pours dark not really clear amber with a dark cherry hue. Aroma is great bringing sweet cherries and some light zingy malts. The flavor has a decent amount of tart and cherries blended so well together not biting the palate but going down quite smooth. The body gets a bit better with the years going on, the ’11 was better than the ’09 and ’10.

2013 vintage bomber at 50°; vibrantly classic deep auburn body flashing amber highlights beneath a 1", quickly fading, light khaki head decorating the vessel with a few dominant angled peninsulas, and random polka dots of lace; a lazy sour and sweet fog illuminated by sunny rays of cherry, plumb, and sweet tart with light candy bringing life to a deserted barn; amplified fruit and tartness flood the palate from a lightly drying slick body, resonating layers of everything the aroma promised

Bomber. Pours a dark copper and ruby color with an inch of light brown foam. Lots of apple cider, cherry, oak and vinegar in the aroma. The flavor is aggressively sour and tart at the start with a healthy serving of white grape, cranberry and strawberry rhubarb notes with a bit of malt and oak at the end. Mouthfeel is medium-bodied with moderate carbonation and an extremely dry, tart finish. Insanely sour but remarkably balanced and drinkable.

Clear very dark copper with ruby hues and a medium bubbly off white head. Aroma is some gently sourness cidery with nice berry notes. Flavor is vinegar with green apples and fuity acidness and some wood at the end. Medium to light palate refreshing and complex.

A - Dark mahogany brown with ruby highlights. A one finger off- white head. S - Sour cherries, green apples, acidic grapes, brown sugar, old oak wood comes at as it warms T - Tart granny smith apples, sour cherries, grapes, raspberries. Sharp musty wood soaked in fruit and vinegar. The oak is heavy on the finish but blends perfectly adding notes of vanilla and a touch of tannin. Finishes mouth wicking dry. M - moderate carbonation, sharp around the edges. Wow! This is extreme mouth puckering sour. There’s so many layers of sweet and sour. This went far beyond my expection! This is simply a masterpiece! Pours hazy brown with voluminous tan head. Aroma is dominated by sour yeasty barnyard with vague notes of vinegar. Woody notes linger. Amazing lingering sour taste with a sweet crisp finish. Amazing beer

Wife got a bomber of this, poured into small snifter glass. Reddish brown color with light tan head. Aroma of vinegar, some fruitiness (cherries, raspberries) and a little malt. Taste is tart fruit (green apple, cherry, some grape), vanilla and oak notes, and caramel malt. Light body, average carbonation, tangy, sour with a clean, tart and dry finish. Tasty, slowly learning to appreciate sours.

Bottle from Wegmans Sterling - pours cola with a white head. Aroma is sour cherries and funky yeast. Taste is sour, like cat’s claws, stabbing sour and then it retreats only to claw you again. Overall, solid, but a little too aggressive for me.

Bottle from Wegman’s Sterling. Pours brown with an inch of khaki foam that disappears quickly. Lots of sourness on the nose. Has a bit of the vanilla from the barrel blended with the sourness. Lingers a bit. Solid for style.

Bottles thanks to Jake (11-13), nice brown pour with some ruby tint, minimal head. Big tart cherry aroma with a little malty hint. Taste is very tart and nice cherry flavor, really dig this one.
