La Folie Wood-Aged Biere, is our original wood-conditioned beer, resting in French Oak barrels between one and three years before being hand bottled, numbered and corked for your enjoyment. Brewmaster, Peter Bouckaert, came to us from Rodenbach – home of the fabled sour red. Our La Folie emulates the spontaneous fermentation beers of Peter’s beloved Flanders with sour apple notes, a dry effervescence, and earthy undertones.

2005 Vintage. My brother lives in Denver and sent me 6 of these beauties last winter! I have been cracking them on special occasions, or when thirsty (always a special occasion). The last bottle was last week, and I have to admit that this beer is improving greatly in the bottle. My impressions last year this time were that it was overattenuated and not nearly as complex as the Rodenbach Grand Cru of 5+ years ago. Interestingly, the complexity is improving in the bottle with more complexity in the later tries. I am down to one bottle and will have to save it for a truly special occasion. Intensely sour, some woodiness, tart, and wonderfully crisp on the palate.

Bottle at home with friends. C&C Vintage 2009 side by side with a 2010. Pour is clear brown with a small tan head and good lacing. Big cherry pit, caramel, some spice, vanilla, toffee, raspberries, tangy and tannins in the aroma. Taste is tangy, some red wine vinegar, oaky, some spice, tannic, wine-like, dark berries, and fruity with a big acidic sour finish. Medium body with high carbonation. This one ages beautifully and much better than the capped version.

A more subdued, woody, earthy version of Le Terroir. Murky brown with a skin of creamy head that clings to the glass. Aroma more of darker dried fruits and milder tartness . Excellent companion to Le Terroir . Ying and yang.

Even-toned brown with almost no head. Very Flanders aroma, and taste is an intensely sour cherry. $12/5

From a tap. Pours a dark amber red with a Coca-Cola tan head which dissipates quickly. Not much lacing left on the glass. Dark fruits, brown sugar and some funk comes through on the aroma. Taste is slightly sweet, some tartness, leather, dark fruits, and sour apples. The sourness stays on the palate for some time, not overpowering. Great beer!

At Redlight Redlight in Orlando on Brandon’s birthday with A and Z , pours a dark brown color with no head. Nose is a deep sour and tart malt, and deliciously so. Taste is fruity and sweet up front followed by a strong tartness and sourness. Finish is sour and tart and mouth puckering. Great sour ! Quaff Score 8 / 100
