COMMERCIAL DESCRIPTION
Cascara Quad is a dark, strong and surprisingly delicate ale made with dates and coffee cherries. Channeling the Trappist tradition, it’s brewed with an ethereal malt bill, and spiced with the fruit of the coffee bean (cascara). The aroma brings dates, cherries and pipe tobacco right to the nose and builds layers with hints of spice and fruity Belgian yeast. Once on the palate, Cascara Quad starts swinging clove, fig and molasses. Each sip offers sweet warmth, deep complexity and fleeting dryness.

Hops: Hallertauer Hersbrucker-Nobel, Styrian-Golding-Nobel
Malts: Pale, Munich, Caramel Munich, Biscuit, Black
Fruits/Spice: Belgium Amber Candy Sugar, Date Sugar, Cascara Tea
Body: Medium-Heavy
Aroma: Ripe figs, raisins, plums, black cherries, toffee, chocolate, pipe tobacco, rich Corinthian leather and leather bound books.
Mouthfeel: Starts big and smooth, finishes still smooth yet the cascara tea and higher ABV will bring a nice dry warm end to this epic novel.
Flavor: Sweet and rich, huge complex overall taste.
Visual: Brooding, dark, cloudy berry brown with tan head.

This is a very big, very sweet beer. Almost cloyingly. Pours a clean amber with one finger of white head. Did I mention it is sweet? Plums on the nose. Some alcohol evident.

22oz bottle in a tulip. Pours cloudy brown with a lacy, beige head. Aroma of spicy yeast, dark fruits and light chocolate notes, a nice toffee and caramel maltiness, some light alcohol, and floral hops. Flavor the same with a decent blend of everything. Average texture. Not a bad beer but not the best of the style.

22 ounce bottle into signature globe glass, bottled in 2/2013. Pours hazy reddish brown color with a 2 finger dense and fluffy light khaki head with good retention, that reduces to a small cap that lingers. Spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of raisin, prune, fig, pear, apple, banana, toast, chocolate, dark candi sugar, brown bread, clove, herbal, leather, and yeast earthiness. Nice aromas with good balance and complexity of fruity esters with dark malt notes; and good strength. Taste of raisin, prune, pear, apple, fig, toast, chocolate, brown bread, leather, banana, dark candi sugar, herbal, clove, and yeast earthiness. Lingering notes of dark and light fruits, toast, chocolate, banana, brown bread, leather, clove, herbal, and yeast earthiness on the finish for a good bit. Very nice balance and complexity of fruity ester and dark bready malt flavors; with zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a slick and creamy mouthfeel that is good. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is a very nice Quadrupel style. Nice balance and complexity of fruity esters with dark bready malt flavors; and very smooth to sip on. This improved a lot as it reached room temperature. A very enjoyable offering.

Cloudy light brown with an inch of tan head which fades at a moderate decay to a film. Aroma is in between Leffe and phenolic American quads, so zesty yeast, light phenols, spice, light brown sugar, hint of fresh bread dough (not enough in my opinion). Body is medium. Flavor is similar to the aroma (next-day review, sorry). I don’t recall hops or caramel sticking out, and I could not pinpoint the coffee berries nor the dates, although the latter may have contributed to the clean light caramel/brown sugar sweetness. I think it deserves a higher rating than it’s got.

Tap at Moon River, Savannah. It pours murky dark brown with pretty much no head. The nose is sweet, brown sugar, dark fruit, raisin, dried cherry, date and candy. The taste is sweet, brown sugar, dried fruit, fig, over-ripe plum, spice, sweet clove, warming booze, black tea and molasses with a sweetish finish. Medium body, low carbonation and a touch cloying as it warms up. A bit muddled and ultimately a let-down. Too sweet, flat and boozy...

A vigorous pour into my teku glass produces a two-finger thick, light amber tinged, tan colored head. The beer is a rich red-amber hue that shows a light red / gold hue when held up to the light. The aroma smells a bit spicy, sweet, quite fruity and fairly alcoholic. Specific notes of cherries, touches of hibiscus, brandy like notes, and a touch of toasted and caramelized malt is noticeable here. There isn’t a ton of complexity here and this doesn’t have as much of a malt depth in the nose as I would expect from a Quad.

Up front this is lightly sweet, even a touch tart somehow, and the finish has a bit of an astringent bite, some alcohol heat, and a prickly carbonic bite to it. The body is perhaps a touch lighter than I was expecting from the pour, it is rich and satiating, but if not for the alcoholic heat would be dangerously quaffable for a beer of this strength. Cherry like notes, a rounded berry flavor, and a touch of hibiscus describe the fruit flavors here, while the malt, playing a distant role, contributes a soft toasted grain character, some brown grain touches, and a sweet whole grain cracker like flavor. There is a light tartness to this rich beer, and now that I have focused on that a date like flavor becomes more noticeable as well.

Not bad, definitely an interesting expression of an exotic ingredient, but in the end, it doesn’t really seem to work that well. Still this is more than serviceable and may even age into something closer to wonderful after the heat gets tamed down a bit.

Pours a deep brownish red. Aromas of bubble gum and banana. Dark fruit too. Coffee congress through in the flavour. But it overwhelms everything. Still pretty good though.

Smells like a rich sugary molasses laden quad with light clove and wood. Pours to a deep mahogany with a lasting tan head and nice lacing. The flavor is sweet but not sugary or cloying. Deep toasted malt with candied dates and coffee like components. The alcohol is noticeable, but this is 10%...

Tap at Pizza Luce. Nice looking murky light amber with a foamy head. Plum and candied sugar, quite cloying. Kind of a fail.
