COMMERCIAL DESCRIPTION
Cascara Quad is a dark, strong and surprisingly delicate ale made with dates and coffee cherries. Channeling the Trappist tradition, it’s brewed with an ethereal malt bill, and spiced with the fruit of the coffee bean (cascara). The aroma brings dates, cherries and pipe tobacco right to the nose and builds layers with hints of spice and fruity Belgian yeast. Once on the palate, Cascara Quad starts swinging clove, fig and molasses. Each sip offers sweet warmth, deep complexity and fleeting dryness.

Hops: Hallertauer Hersbrucker-Nobel, Styrian-Golding-Nobel
Malts: Pale, Munich, Caramel Munich, Biscuit, Black
Fruits/Spice: Belgium Amber Candy Sugar, Date Sugar, Cascara Tea
Body: Medium-Heavy
Aroma: Ripe figs, raisins, plums, black cherries, toffee, chocolate, pipe tobacco, rich Corinthian leather and leather bound books.
Mouthfeel: Starts big and smooth, finishes still smooth yet the cascara tea and higher ABV will bring a nice dry warm end to this epic novel.
Flavor: Sweet and rich, huge complex overall taste.
Visual: Brooding, dark, cloudy berry brown with tan head.

650 ml. Clear darkish copper with a small covering of bubbles. Nose is cherry liqueur, toffee, raisin, cocoa and toasted grain. Taste is orange toffee, cherry liqueur, toast, and dates. Finishes with dried flowers, wood, alcohol, and a hint of cocoa. Medium body is sweet, but finishes almost astringently dry and boozy. Nearly too fizzy with a medium-high carbonation level. There seems to be a lot going on here, but it’s mostly covered up by the sweetness and booze.

UPDATED: AUG 2, 2013 Pours a medium red amber with a fine two finger off white head with great retention and lacing. Fruit forward aroma of stone fruit and cherry, caramel malt. Flavor begins with rich estery fruit; cherry, apple and light stone fruit and then dries out abruptly and finishes very light and dry with a slightly astringent bitterness. Medium bodied with spicy carbonation in the finish. An interesting and odd take on the quadrupel style. The coffee cherries really do add a pleasant cherry flavor. I would have liked a bit more presence from the dates, which would have given a bit more body to support the sweet fruit flavors. Not a traditional quadrupel, but delivers the coffee cherry experience nicely. Warming and a bit alcohol forward. Kinda boozy and thin. Cherry stands out. Kind of like grandpa’s Dr Pepper. Vanilla soda. The alcohol saves it. Why why why!

Murky brown color with a generous white head. Smells of cherry dominates, Belgian yeastiness. Tastes very much as it smells. A little bit of caramel, coffee at the end but they are subtle. Bottle. Pours a hazy golden red color with a creamy light tan head. Aroma is fruity, candied cherries, a bit grainy and figs, dates. Flavor has much the same, dates, cherries, very candyish, syrupy flavor. Finishing with a kind of artificial character that lingers with the fruity and malty note. Medium body and a crisp carbonation. Meh

Bottle from Wegmans sterling - pours amber with a thin white head. Aroma is boozy with a stone fruit, dates, that sort of thing. Taste is sweet with some spice. Overall, meh.

bottle from Wegman’s Sterlling. pours brown with a khaki head. has a bit of lacing. has kind of a fruitiniess on the nose. has some date and dark fruit vibe on the tongue which I’m not feeling. finishes clean. eh!

22 oz bottle. Pours ruby amber with a big creamy off white head that retains well and laces the glass.

The aroma is sweet toffee malts, with dark fruits and some roasted alcohol.

The flavor is sweet toffee malts and dark fruits with a lot of harsh alcohol. The mouthfeel is medium bodied with low carbonation.

Overall, a sweet boozy mess. It tastes a bit like their dubbel with a ton of alcohol.

Pours a dark copper with a cream colored head after an aggressive pour. Belgian yeast, cherries, dates and a hint of coffee both on tthe taste and aroma. I expected this to be a bit sweeter on the finish but was pleasantly surprised by the dry finish.

Thanks to bu11zeye for sharing this bottle. Orange with a white head. Aroma has some alcohol, dark fruit and raisin notes. Flavor is similar. I get some raisins and cherries, as well as some brown sugar and alcohol. Medium mouthfeel and medium carbonation.

Rich, dense and hazy amber coloured body with some brown tints and a thick two centimetre dense tan head with some hints of orange. Aroma of alcohol, raisins, malt, toffee, caramel and a bit of metal. Medium to Full-bodied; Super strong alcohol warmth and bite coupled with some metallic and earthy bitterness show too much up front with not enough sugar and coffee flavour. Aftertaste has a hint of cascara tea, but mostly bitterness from earth and malt and a profound alcohol bite that isn’t pleasant. Overall, a pretty poor offering and perhaps one of the worst from this series. I’d pass this up if I saw it again, but would most likely buy a bunch of others. I sampled this 65 cL bottle purchased from Arrowine in Arlington, Virginia for US$6.99 on 12-March-2013 sampled at home in Washington on 16-May-2013.
