Cascara Quad is a dark, strong and surprisingly delicate ale made with dates and coffee cherries. Channeling the Trappist tradition, itís brewed with an ethereal malt bill, and spiced with the fruit of the coffee bean (cascara). The aroma brings dates, cherries and pipe tobacco right to the nose and builds layers with hints of spice and fruity Belgian yeast. Once on the palate, Cascara Quad starts swinging clove, fig and molasses. Each sip offers sweet warmth, deep complexity and fleeting dryness.

Hops: Hallertauer Hersbrucker-Nobel, Styrian-Golding-Nobel
Malts: Pale, Munich, Caramel Munich, Biscuit, Black
Fruits/Spice: Belgium Amber Candy Sugar, Date Sugar, Cascara Tea
Body: Medium-Heavy
Aroma: Ripe figs, raisins, plums, black cherries, toffee, chocolate, pipe tobacco, rich Corinthian leather and leather bound books.
Mouthfeel: Starts big and smooth, finishes still smooth yet the cascara tea and higher ABV will bring a nice dry warm end to this epic novel.
Flavor: Sweet and rich, huge complex overall taste.
Visual: Brooding, dark, cloudy berry brown with tan head.

Pours a dark copper with a cream colored head after an aggressive pour. Belgian yeast, cherries, dates and a hint of coffee both on tthe taste and aroma. I expected this to be a bit sweeter on the finish but was pleasantly surprised by the dry finish.

On tap at D&T. Pours a dark brown with thick creamy beige head that lasts leaving spotty lacing. The aroma is yeast, brown sugar, figs. Medium mouth, strong yeast, sugary malt, toffee, lingering sweetness, very good.

Oh my gosh cherries. Tart beautiful cherry aroma. Pours slightly cloudy and a brownish read with a lacy head. Taste is super sweet, with cherries very present. Thereís some bitterness that lingers and I canít tell what from? Fruit? Really thin and bubbly. The problem(???) with this beer is that I canít taste the style. Itís just a delicious cherry ale. The alcohol burn starts asserting itself halfway in. Great otherwise.

Bottle. Pours a deep amber brown with a small off-white head. Aroma was malty with cherries, caramel and fruit. Flavor was quite sweet with dark fruit, dates, cherries, caramel and coffee.

It was all I could do not to open this from my cellar, but thankfully I made it 6 months and was able to do it. The flavors achieved and brilliance of the odd parings of them were wonderful. The aroma is reminiscent of a smokier sour, but the taste is earthy, subtle cherry and coffee with a very smooth lasting finish.

Dark in color with a thick aroma of fruit and whiffs of sour. Light toffee and fig like characters. This was a big Belgian Quad super nice.

March 16th, 2013 - Are these llamas before my eyes? Llamas dancing around my bottle? I hope so, because this might be a first for llamas gracing a beer label, and I like what it suggests: nothing. I canít think of a flavor association between llamas and beer that makes any kind of sense, which raises the mystery factor considerably. The pour produces a fuzzy, fluffy looking head and a short, dwarfish tan head. Cinnamon and the signature childhood smell of Cinnamon Pop-Tarts are easy to pick out, adding brown sugar notes, but definitely a kind of artificial flavoring. Bubble gum and red grape appear in the nose too. The flavor trades some of the aromaís cinnamon for that sweet and umami rich yeastiness, and the fruit flavors here are less pointedly sweet. Pear makes an appearance with a louder voice than the accompanying cherry and blackberry notes. I donít recall ever having had a quadruple from New Belgium before, but I love what the llama has brought me.

"I dug this. Definitely not a traditional quad or anything else. Deep malts, chocolate covered cherries, spicy yeast character and some pipe tobacco for good measure. I. Hope to find one more o these before its gone for good. 2013 - on tap shows a LOT more booze than my bomber did, especially next to some more restrained beers. Gots ta dock it a little..."
