COMMERCIAL DESCRIPTION
This winter saison starts with pale and black barley malts creating a deep midnight hue with reddish highlights. The beer is spiced with cardamom, heather and black pepper for a touch of sweet that fades to a warm, peppery finish. Target and Saaz hops accentuate the spicing while the peppery notes balance nicely with the fruitiness of the saison yeast. The resulting dark saison is a lovely tongue tingler for those long winter nights.

On tap at OBriens. Reddish brown pour, off-white head. Lots of fruit in this one. Malt, banana, chewy sweet bread, fruit, clove, and pepper. Itís okay, but Im not a huge fan.

On tap at obriens. Poured a dark reddish brown with not much head. Aroma of wheat, yeast, banana, smoke, pepper, and something akin to vegetable. Spice, herbs, yeast, wheat, a touch medicinal but not in a bad way. Solid palate. Nice long finish. Solid.

Draft @ Toad in the Hole. Pours a deep, ruby-cola color; creamy, light-tan head with great retention and Brussels lacing. Soft brown sugar and floral notes in the aroma: the heather comes across as softly, generously flora; ginger-like, almost; nicely dry. Medium body: lots of floral character, mildly hopped, moderate-to-lively carbonation; a fruity, chewy yeast character showing some bananas and cloves; fluffy mouthfeel, lots of soft-edged floral notes, and pleasantly estery yeast. Solid Belgian rendition, if just a touch hollow at the core. Medium finish of floral notes, toastiness, creamy yeast.

On tap at the brewery. Pours dark brown with a creamy beige head. Aroma of beef jerky, smoke and spice. Taste is also quite beefy with some yeast tartness and spice. Very smooth, flavor is quite unique and I couldnít really figure out if I enjoyed it or if I was just stupified by it. Soft carbonation.

(draught at draught house in Austin,tx) pours very dark, huge tab head and excellent lacing. Nose of dandelion, florals, Belgian yeast, nice sweet fruits. Taste is very fruity, cinnamon, nutmeg, rye bread, rainsin bread. Nice carbonated creamy finish thatís a little watery.

Tasted at Extreme Beerfest. Mahogany/cola color with a tan head. Sour earthy smell, but not harshly so. Herby and unusual. Ends with a taste of peanuts. ?? An interesting and sophisticated beer.

Pours very dark with an off-white head. The aroma is spicy with some cobwebs sort of thing, dark fruits and toasty malt along with saison yeastiness. Medium full frothy body with soft full carbonation. the flavor stars like the aroma, but is more full tasting and far more herbal heather coming out. The finish is spicy and has a bitter heather taste to it. As the beer warms the taste gets a bit more rich and the bitterness subsides a bit. A nice offering from New Belgium.

Sampled at the 2010 Crescent Moon Extreme Beer Festival. This has an unusual color. Itís like a brownish gold with an ivory colored head. Thereís an interesting floral spiced aroma of cardamon. Could this be heather? The flavor is very complex. Meaty, yet spiced with lots of esters. I detect some peat and slightly moldy hay. This is really innovative and unusual.

(draught at NB meet-up at Mattingly) deep brown with generous tan head and nice lace. Yeasty woody spicy malt aroma. Flavor is saison spice, caramel malt, heather. Really nice saison.
