Experimentation doesn’t mean new. With our Gruit, the latest Lips of Faith release, it’s all about revisiting the ancient craft of bittering with herb mixtures, not hops. In here horehound, bog myrtle, yarrow, wormwood and elderflowers get together with rich malts to create a bitter, dry, velvet-like sweetness worth revering.

This beer pours a slightly hazy yellow with a medium white head. The aroma blends lemons, flowers, and earthiness, and the taste is mildly sour and slightly sweet with a slightly citrusy and slightly clove-esque aftertaste. The palate fuses a slick and thin texture, light body, and an average carbonation.

I expected something a bit more different considering the lack of hops. The herbs are mellow and yet they define the beer.

Pours light golden, slightly cloudy, thick head. Sweet citrus, lemongrass, smell. Clean, crisp, bittersweet taste. Light velvet fizz across the tongue. Great finish, with hint of the horehound lingering. Definitely drink this again.

Lemongrass, pear, funk aroma, rather like a saison. Hazy golden, thick sticky head. Lemongrass and pear flavor. Tangy cola finish, almost like sarsaparilla. Medium body, soft carbonation. Hop-less farmhouse ale, neat idea, and well done

Slightly hazy golden coloured body with a straw pale tint and a nice two centimetre tall microfoamed head. Aroma of grass, yeast, coriander seed and hay - without any label, you’d think it was a belgian white from the look and smell alone. Light-bodied; Sharp earthy and spicey character up front with some definite herbal and woodsy flavours showing off the unique spices and herbs. Aftertaste shows a lot of bitterness way up front that is a bit more pronounced and mellow after a few minutes then all ending in a sweet and very herbal grassy dry finish. Overall, a good take on a gruit with a lot of complexity and a way that still makes it drinkable and to be honest - enjoyable. I sampled this 65 cL bottle purchased from Whole Foods in Arlington (Clarendon), Virginia on 07-April-2014 for US$8,99 sampled at home in Washington on 25-November-2014.

The aroma is that of a warm ferm sasion with herbal notes heavy on the yarrow and elderflower with the horehound following up with earthy licorice notes. Color is solid dark golden hue. Taste is pretty fantastic as it warms and gives way to the lingering bitterness of the wormwood. It is very well balanced for its lack of hops. Would drink again.
