Oh my God. It’s not only a reaction for drinking one of Dieu De Ciel’s beers, but a figurative translation of the Montreal brewery’s name. Just ask our brewmaster, he’s in heaven when drinking this collaborative tripel, inspired by Dieu De Ciel’s love of hibiscus and Belgians love of the obscure, hence our addition of tart feijoa fruit. Cheers!

Bottle @ SF 5. Clear honey color. Smells a little like apple juice. Very mild flavor, lightly tart.

April 13th, 2013 - I like sour ales. I like brett. But sezchuan pepper? I’m so uncultured I’ve never had sezchuan cuisine, let alone its ingredients in my beer. But the mix is curious. The aroma is is heavy with citrus and peach, with an oak edge that often appears in brett-fermented beers. Rivulets of pear juice also run in the aroma, and the light peach and pear remind me of a popular fruit flavor common in Japan, appearing in drinks and candies. I also smell something that conjures images of shredded carrot and raisin salad - tangy and sweet at the same time, but softly sugared. The flavor begins flat and surreptitious, and then rises up to a louder churning of carbonation, before fading again into a wistful blend of pear and white peach. The mouthfeel is soft across all the transformations, and gets lighter the more you consider it. The sugar is disciplined, opting for an soft, pillowy fruit sweetness that I first tasted in Unibroue’s Ephemera. The aftertaste (well after the final notes of fresh pears) tastes more like chewing on dry, granular pear skins, and is actively unpleasant. But overall this is a fruit beer that takes a gentle approach to the style, and I rather like it. By the way, where’s the pepper?

On tap at my brother Tony’s house. Pours hazy gold with minimal white head. Smells of some fruitiness and like white wine. Taste some citrus and sour fruit. Pretty good beer.

Pours slightly cloudy gold some head some lacing. Nose is fruity and some candy. Tastes of slight tart cherries some sour apples light candy. Tastes light tart light/med sweet little bitter. Light body lively carbonation.

Reviewed from notes. This was poured into a chalice. The appearance was a nice looking hazy golden to slightly bronzed amber orange color with a slim white foamy head that dissipated in a nice way. Adequate light lacing started to show after the head dissipated. The smell had a light sweet floral and "iced apple" sort of bready yeasty behavior. Slightly sugary sweet esters invade in a nice way. The taste was basically the same through sweet earthy and floral arrangements conglomeration on my taste buds. On the palate, this one sat about a medium on the body with a fairly decent sessionability about it. The carbonation was somewhat subdued but still good for the style and for me. A trickling florally sweet stickiness rolled over my tongue. Overall, nice tripel I could do again.

On tap 6 oz. sampler at The Bistro in Old Line Wine in Beltsville, MD. Clear, but with a light haze, with a fine off-white head and excellent lacing. Aroma of grapes, white wine, sweet light fruit, tart citrus and sour dough bread. Taste of citrus, sour tropical fruit, white grapes and sour dough bread. "Awesome aroma, like a fruity white wine, with notes of hibiscus, pineapple, soft honeysuckle. Taste is almost as good, with hints of yeast as well, and well hidden alcohol. Really liked this one."

Appearance: clear gold, bright white head, minimal lacing. Aroma: fruity and floral, with yeast and crackers. Taste: citrus and light tropical fruit, floral tartness, a bit of yeasty spice, and a weird herbal cracker malt note underneath. Finish: dry finish, with lingering herbal and floral notes over that odd toasty malt. Notes: Had one fresh, and one aged for a year. Complex and interesting, but not exactly my cup of tea.
