Le Terroir is a French term meaning ‘Of the Earth.’ Used to reference the environmental conditional that affect the brew, we like to think about the terroir of our foeders. These wooden barrels age our sour beer in varying temperatures, humidity and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with peachy, mango-like Amarillo hops, and we created a beer that changes every time we brew it.

[2/11/15] Draught at Toronado in San Francisco. Hazy orange. Lovely funky aroma, cellary, with cobwebs, fruits, oak, sweat and some hops. Sour flavor, fruity, funky, oaky, a bit vinous, with some nice fresh fruity hops. Leaves the mouth dry. Medium-bodied. Great stuff.

Pour is golden honey amber with very high white head. Smells like a dry hoppy ipa. Citrusy and very heavy caramel malt on the nose. To strong. Lightly tart and very malty heavy thicker body. Warming end. Taste is a dichotomy. The hop and malt varieties used just compete with a nice light sour. Some honey and floral notes. I want to like it but just can't, the tastes compete. V8 ending.

Very nice floral tropical hoppy aroma with lactic sour following. Sour maybe 5 of 10. Nice woody flavors in there as well as oaky. Light in color. Doesn’t have the dark fruit flavors of some darker sours. Really a great sour. Love the dry hopping and what it adds. Very drinkable session able sour, but still full bodied and quite sour. Really love it, just missing some of the many complex flavors of other sours that causes me to bump up the rating a bit. But still so good. ---Rated via Beer Buddy for iPhone

Tap at Stumbling Monk, Seattle. Colour is cloudy deep orange with small white head. Aromas and flavours: Aromas and flavours: Fruits, tropical fruits, some berries and sourness. Pretty typical American sour with juicy elements.

Smells faintly like lemon and yeast. Taste is light to medium lactic sourness, lemons, saisony spicy yeast, and a tad bit of hop/citrus bitterness. Lively carbonation with mild foam.

2014 Bomber: Coppery orange color with about an inch of rather quickly settling orange tinted tan foam. I catch aromas of orange, mango caramel, barnyard funky notes. Tart for sure, it’s got awesome lemony sourness, some earthy yeastiness, caramel, juicy tropical fruits. Medium bodied, the carbonation is crisp and prickly but not overwhelming. It finishes with a toasty, biscuit quality and a touch of fruit cocktail syrup.

Bottle. Pours a somewhat hazy amber color with a moderate white head on there. Nose is sour and fruity, and somewhat inviting. Taste is also definitely sour, but has a pleasant lightness to it.

On tap at Stein’s Beer Garden. Wonderful tart fruity aroma. Highly tart taste. Some vinegar. Tasty sour.

The mixture of sour and hops is outstanding. You smell hops and then you taste the sourness with fresh hops. The sourness and bitterness partially cancel out but stay impressive. This beer is insanely special.
