Le Terroir is a French term meaning ‘Of the Earth.’ Used to reference the environmental conditional that affect the brew, we like to think about the terroir of our foeders. These wooden barrels age our sour beer in varying temperatures, humidity and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with peachy, mango-like Amarillo hops, and we created a beer that changes every time we brew it.

Pours a hazy golden orange from the 2013 bottle with wispy white head that leaves moderate lace. Aroma of nice lactic sourness and a hint of citrus from the hops. Taste follows, bitter and sour at the same time, nice sweet fruit notes with a lasting pucker.

Bottle to glass. Pours a slightly hazy light amber apricot flavor with a thin fizzy white head. Aroma is the classic acetic acid character with hints of citrusy hops, apricots. Flavor is wonderful. Sour notes with lots of fruity sweetness, orange, peach, apricots. Oily palate with a light lingering sour and continued fruity hops. Definitely one of my favorite sours I’ve ever had!

It has a dark golden colour that’s cloudy. It smells very hoppy, but is not very bitter in taste, but has a lingering sourness with crisp carbonation. Great beer!

Bottle (22 oz). Thanks to Scott for this one. Almost clear golden/orange with a small diminishing but easy to revive off-white head and little to no lacing. Aroma is really fruity (tropical fruits) with some funk notes (almost barnyard-esque) and light sweetness. Taste is fruity (tropical fruits) with light to moderate sourness, oak presence and light caramel. Medium body. Moderate carbonation. Slightly sirupy and oily mouthfeel. Very good Sour. Not too acetic. There’s nothing that really stand out, but it’s quite tasty, super drinkable and enjoyable. Well crafted brew. If it was not written in the description of the beer, I would never have known that that the beer was dry-hopped.

bottle. Deep golden with small head. Robust hoppy aroma. Lemony brett flavor. Not much hop flavor at all, but the complex fruity wood flavor that is here is excellent.

3 oz. sample at Exhibit A(le). Pours a hazy orange color, with a big, frothy, beige head. The aroma is mandarin oranges, mangoes, white grapes, caramel, and some light salt. Very sour up front, with a mellow sweetness growing through the finish. The aftertaste is persistent and sour. Medium to heavy body, sticky, and clingy. While distinctly sour, this is a nice, balanced, and relatively subdued sour ale.
