Le Terroir is a French term meaning ‘Of the Earth.’ Used to reference the environmental conditional that affect the brew, we like to think about the terroir of our foeders. These wooden barrels age our sour beer in varying temperatures, humidity and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with peachy, mango-like Amarillo hops, and we created a beer that changes every time we brew it.

On tap at fobab. Pours a peachy orange clear color with a white head. Aroma of mangoes, peaches, tropical fruits, citrus hops, slight sour lacto but mostly hops. Taste is sour but not crazy. Light crisp bitter/sour finish. Really awesome. Top 5 fobab beer for me.

Bomber. Clear peachy orange, off-white foam fades and rings. Tart funky fruity aroma. Taste is mostly tangy tart citric and green fruit, which pretty much smothers anything else. Average carbonation, light-medium bodied, low hopped. Good quencher/palate cleanser. LBW (Lagerboys Be Wary)

Polished brass pours from the bomber into the snifter, a small white head follows and quickly dissipates, leaving islands of soft froth on the surface. A very light aroma from the neck, a fruity sauerkraut, with shades of salted grapefruit behind. The first sip is a powerhouse and knocks my senses for a loop, tightening my taste buds and creating a whole new world in my mouth. Sour but extremely clean, the flavors are deep and complex, giving me a bit of a whirlwind to describe. Sharp and fruity with an almost acrid foundation, the hops bitterness actually a light layer that seems to keep that from happening. The light fruit aroma is carried forward on a platform of fresh yogurt, teeming with lactic acid and ends with a vinegary hit on the underside of my tongue and the top of my throat. The finish is extraordinarily dry and very short. There is no "hanging on" with the taste. Nice, considering what it could be to have that kind of sour hanging out in your mouth for too long! I am overwhelmed with the sensations of this brew and wish I had more than a bomber, and much more time, to investigate the intricacies. I am looking forward to seeing how the recipes change over the course of time...as it has been said that it changes every time they brew it.

This poured a hazy yellow color with a white head. Aroma was of fruity hops, earthy light funk, some lemon and pale grain Flavor similar, great blend of.mild butting acidity and fresh cut.hops. Great refreshing stuff.

From the start on tap at the magic tree this beer rocks. Nice perfumy tart aroma. Clear pale yellow. Perhaps a slight haze. Good cutting co2 sizzle. Taste is oh so yummy. Really like this stuff, wild effects and all. A very good friendly tart tasty brew. easy going and pleasant on the tongue. Not over the top in vinegar but certainly lets you know its sour. Nice job. Lovely beer experience. Ever so slight bitterness on the finish.

Sampled at PPD. Pours a hazy orange with some slim, creamy head. Nose has a mix of citrus fruit and malt vinegar, orange rind, some grapefruit rind, some unripened blood orange, acetic acid, some wood pulp, grassy, a little medicine cabinet too. Flavor has a lot of acid, both citrus acid and acetic acid, blood orange, over ripe lemon, grapefruit rind, orange rind, malt vinegar, vitamin C tablet, mild straw, wood pulp, some red grape, a little cooked greens. Full bodied, tart finish.

On tap at Longman and Eagle in Chicago. I don’t know how I’ve never had this, but I haven’t. Not too sour at all...a nice citrus fruit tartness but definitely mellowed from the barreling. Wasn’t so sour as to ruin my palate for the evening, which was nice. Balanced.
