Le Terroir is a French term meaning ‘Of the Earth.’ Used to reference the environmental conditional that affect the brew, we like to think about the terroir of our foeders. These wooden barrels age our sour beer in varying temperatures, humidity and vibrations. The terroir of New Belgium, so to speak. Add in another variable by dry-hopping with peachy, mango-like Amarillo hops, and we created a beer that changes every time we brew it.

On tap at Bar on Buena as "Lips of Faith Le Terroir." Smells like warm sour cherries in dust and brandy. Opaque copper with a thin head. As sour as La Folie, but lighter in its fruit flavors and texture; more like melons and granny smith apples, with a hint of banana; bright and refreshing. As much as I love La Folie, this is more drinkable without sacraficing the sour goodness. Perhaps a bit less complex, it is nonetheless super-delicious. I’m a whore for sours, and I will gladly be this beer’s bitch any time it’s on tap.

Poured from bottle into a pint glass Appearance – The beer pours a clear golden amber color with a big billowy white head. The head fades slowly over time to leave tons of spider web lacing on the sides of the glass. Smell – The aroma of the brew is rather strong of a sour green apple smell which has a decent showing of some lemon and a bit of a grainy funk. Along with these aromas comes some fruit aromas of peach, apricot, and pear smells with a hint of a hay like aroma thrown in as well. Taste – The taste begins with a rather funky sour green apple and light fruit (peach, apricot, pear) taste that is overall drier in nature. As the taste moves forward, the sourness increases as some lemon and a tart grapefruit flavor joins the taste. Grass, herbal, and citrus hop flavors come more toward the end, and with the funk stepping it up a bit, it leaves one is with a dryer-light (in color) funky and sour fruit taste to linger on the tongue. Mouthfeel – The body of the beer is rather thin for a 7.5 % abv. brew with a carbonation level that is rather high. For the style and the sour and tart flavors the feel is spot on, keeping the brew overall very easy sipping and still very tart and sour without allowing these flavors to overwhelm the taste buds. Overall- A decently sour and tart-light fruit flavored brew with just a little bit of hop to help subdue the bitter and sour. A rather decent and crisp sour overall.

Music and beer have a special relationship in my mind. I’m always listening to something when I write reviews. For the write-up on Le Terroir, the choice was easy: Terristrials - a collaboration album between Sunn 0))) and Ulver. The earthly theme was the main reason for my choice, but they have more in common than that. Both are experimental, unique endeavors executed with class and artistry. Adventurers find them fascinating and rewarding. The uninitiated will be baffled by all the elements and find the more intense notes to be off-putting. Sour beers and experimental brews have a lot in common that way. They’ll thrill some people and vex others.

12oz on tap @ Fire & Hops. Pours hazy orange with a low head. Aroma is sour malts with fruits. Flavor is sour malts, some fruits and some hops. Excellent.

Bottle. A- Sour, vinegar, tart, lemons, subtle oak. A- Orange color, hazy liquid, off white head. T- Pickle brine, sour, tart, citrus. P- Light body, average texture, medium carbonation, tart finish. O- Good sour. I kind of wanted more of a cherry sourness and less of the pickle/vinegar flavor but still managed to make this work with the bitterness that was involved.

Tap at Clubhouse BFD. Pours clear yellow. Aroma is sour, tart, vinegar notes. Nice. Flavor is sweet and sour and vinegar heavy. I like. It.

Bottle, 2013 edition. Hazy dark orange with small off-white foamy head, faintly acidic aroma, medium carbonation, sweet-tart taste with hops bitterness at the background, hint of mango, medium bitter finish with tart aftertaste. Very nicely crafted sour ale.

Bottle at Burspraks Blind Imperial Stout Tasting thanks to the man himself! Pours a clear amber with a medium sized, long lasting, white head. Aroma is very hoppy and funky. Peach, tangerine peel, very little tartness, but lots of dry notes. Taste is more tart, but still very juicy. Tangering, bitter citrus peel. Very nice and slight leathery. Medium high carbonation and a crisp, juicy body.

Bottle @ Burspraks Blindtasting thanks to Bursprak! Pours hazy golden with a small white head. Aromas of peach, hops, orange, vinegar, citrus, grapefruit. Taste has lots of tangerines, grapefruit, peach, floral notes, lemon zest, dry finish. Nice!

Bottle @ Dangerous Bottle Share (pure imperial stout version). Dark golden pour with a small pale head. Nose is hoppy, grapefruit, lemon peel, citrus and stone fruit. Taste has tangerine, grapefruit, floral notes, citrus, light bitterness and a light lingering tartness.
