Using dandelion greens to bitter a Belgian-style ale blossomed from our brewers collaborating with Red Rock Brewing. This being our sixth interpretation together since 2008, expect a wonderfully complex ale fermented with wild Belgian yeast and blended with just a touch of wood-aged beer. Bitterness imparted from dandelion greens and grains of paradise will have you blowing wishes for sips.

22 oz bottle. Weird concept to brew this kind of beer at such a strength. I think I would have liked it better at half the ABV. Anyway, it looks really nice in the glass… bright orange color with a lasting, creamy white head. The aroma doesn’t do it for me though. Bready, doughy with some honey and peach fruit. The flavor is kind of mimosa-like with oranges, alcohol, bread, and a strong yeasty finish. Not a bad beer for a 9:00 am beer, but I didn’t finish the bomber.

22oz bottle. Poured a hazy gold with a slight white head. Slightly sour aroma with a bit of wood. Medium bodied without much carbonation. Slight tartness. Bit of sweetness and a little fruit. Overall not really a whole lot going on here. Didn’t do it for me.

Glowing orange color. A citrus peel, farm smells. A herbaceous citrus peel taste that lasts. smooth and creamy on the palate. The herbs seem to cary some of the bitterness of this one.

This is a bery cloudy, light apri ot color with a cotton-like white head. The aroma is dried sugary citrus. The flavor is thick, ripe, dried fruit. Its sweet. Bitterness comes on the finish but you would never know why. Its just so thick, rich and sweet id rather eat a piece of dried fruit while sipping a czechvar.

Hazy golden pour. Aroma is peaches, fruity and herbal and flowery. Taste is an interesting one. Peaches, wood, some earthiness. I like it.

Bottle. From bman1113vr. Vegemite, herbal, earth, dust, light esters, light fusels. Flavor is herbal, grassy, fruity esters, sulphur, weeds, pepper. Med carb and semi dry.

Definitely unusual. The base taste is Belgian yeast. After that, a cacophony of complexity that defies complete identification of individual components. Getting some smokiness (from the wood aging maybe?). Getting some bitterness (from the dandelions maybe?). Getting some sweetness (presumably from the peach juice?). It's interesting and I like it for its uniqueness -- this to me is what American craft brewing is about: saying "screw it" to established categories and blazing new trails. Bomber. Pours a hazy yellow color with an off-white creamy head. Good head retention. Aroma of syrupy fruits, earthy notes, mustard, spice, vegetal notes, stone fruits. The taste is citrus, spice, stone fruits and a spicy, earthy finish. Medium bodied, lingering spice. Interesting.
