Using dandelion greens to bitter a Belgian-style ale blossomed from our brewers collaborating with Red Rock Brewing. This being our sixth interpretation together since 2008, expect a wonderfully complex ale fermented with wild Belgian yeast and blended with just a touch of wood-aged beer. Bitterness imparted from dandelion greens and grains of paradise will have you blowing wishes for sips.

Golden beer with a white head. Some fruit and grain on the nose. A bit of wood and leafy or vegetal smell as well. Taste was nice. Some nice bitterness from the dandelion. Alcohol is well hidden.

Hazy gold beer, decent off white head. Smooth palate, slightly dry. Mild fine carbonation. Mild and sweet generic tinned fruit juice. Floral sweetness. Super mild spice. Light semi dry finish. A nice idea but itís borderline stodgy, really wants something to give it zip. Hides the abv well though!

bottle @ Party Source / Bellevue KY --- enjoy by May 2014. Cloudy medium amber with a full head cover, broken curtain of lace. Taste is caramel malt doused with light spice and yeasty biscuit, moving to a bitter grass finish that is light and proper for this brew. A solid light Belgian - doesnít earn the 9%abv with taste.

"Cloudy bright yellow, sweet aroma and flavor, and a good body letting you know itís a hefty beer. Floral and slightly sugary, with a little grassy bite from the greens, and a touch of tart. Really different, good brew."

At first pour, Paardebloem is a beautiful, dark, almost creamy looking orange, with an extremely frothy head that lingers. It is floral/grassy and citrusy, even a little woodsy. It says íbest enjoyed by May 2014,í and I believe this is why the beer appears to be so flat to me. Itís a fairly light beer, the more I drink the more flavors I seem to notice. Overall, this isnít my type of beer, I donít think I would purchase it again.

22 ounce bottle, says Best Enjoyed by May 2014. Guess this was in my fridge longer than I thought. Served in a DFH Signature glass, the beer pours a hazy dark golden/orange color with about an inch off-white head. Head retention and lacing are both good. It smells like peaches, herbs/earthiness, white grapes/wine, citrus, and some bready malt. Taste is similar to the aroma, but with the addition of a bit of clove and grassiness. Itís fruity, tart and bitter. Mouthfeel/body is medium, itís a bit coating and has a good amount of carbonation. I thought this was a good brew, I liked it.

Not too much aroma. Beautiful head, but a bit of chill haze. Nice bitter. Working through the add-ons tastes, the peach juice is present and nice balance - very minimal added sweetness, just flavor. Very light on wood agedness. Grains of Paradise and dandelion greens - not familiar with them in the brew, but there are some interesting tastes going on - Iím good with crediting them, or just great hop choices. Nicely done. Could almost fall under "fruit beer" more than Belgian.

Bottle at Babajan, Stockholm. Clear golden beer with a decent offwhite head. Hoppy floral aroma, grassy, hay, citrus, peach, citrus, some grapefruit. Hoppy floral flavor, grassy, hay, dandelions, peach, herbal notes. Decent beer.
