Using dandelion greens to bitter a Belgian-style ale blossomed from our brewers collaborating with Red Rock Brewing. This being our sixth interpretation together since 2008, expect a wonderfully complex ale fermented with wild Belgian yeast and blended with just a touch of wood-aged beer. Bitterness imparted from dandelion greens and grains of paradise will have you blowing wishes for sips.

[ As New Belgium Lips of Faith - Paardebloem ].
Clear medium golden orange yellow color with a small average, frothy, good lacing, mostly lasting to diminishing, off-white to white head. Aroma is moderate malty, pale malt, caramel, moderate to heavy yeasty, tart berry, sweet berry, belgium yeast. Flavor is moderate to light heavy sweet and moderate to heavy bitter with a long duration, flowery bitter, belgium yeast. Body is medium, texture is oily to watery, carbonation is soft. [20150922]

Draft @ Hopleaf, Chicago, IL. Pours a hazy golden color with a small white head. Has a fruity spicy yeasty aroma. Fruity malty spicy yeasty flavor with weak funky hints. Has a fruity malty spicy yeasty weak woody finish.

Hazy gold beer, decent off white head. Smooth palate, slightly dry. Mild fine carbonation. Mild and sweet generic tinned fruit juice. Floral sweetness. Super mild spice. Light semi dry finish. A nice idea but itís borderline stodgy, really wants something to give it zip. Hides the abv well though!

Draft. Hazy golden yellow color, fluffy white head, nice lacing. Aroma of funky, dusty straw and pepper. Taste is very slightly tangy straw and raw bread dough. Nice.

Bottle at Babajan, Stockholm. Clear golden beer with a decent offwhite head. Hoppy floral aroma, grassy, hay, citrus, peach, citrus, some grapefruit. Hoppy floral flavor, grassy, hay, dandelions, peach, herbal notes. Decent beer.

On tap at City Beer. A hazy one, orange in color, topped by a small, off-white head. Quite fruity aroma, with some apricot and malty sweetness. Full body, semi dry, with pleasant carbonation. Sweet flavor with a little sourish touch, fruity. Some warmth towards the end. Thereís a strange, herbal touch going on, donít know what, but it doesnít add anything that saves the beer from being boring. 130805

On tap @ Congregation Azusa. Hazy yellow-orange pour with a white head. Nose is really heavy on the apple and has some weird woody, herbal notes. Grass, tartness, pepper, and some sweet sugar and malt. The flavor is sugar, apple, and bread. Weird tartness, pepper, herbs, and some grass.

On tap at the Alibi Room, pours a cloudy pale orange with a small off-white head. Aroma is very strange, with indiscernible spices, maybe a touch of the dandelion - canít tell what else. Flavour brings out some interesting spice mix that I really canít discern, along with some Belgian yeast, and dandelions. Quite light on the palate, with a very Belgian character. Solid off-kilter ale.

Bomber from The Davis Beer Shoppe. Pours hazy gold with a foamy white head. Nose is tart fruit. Med body. Flavor is a mystery at first. With 15 secs or so there are Belgian fruit-esters, and some light bitterness. It edges on a citric sour. Seems dry. Finishing bitter and becoming more towards sour. Donít know why I canít get more enthusiastic about this.
