The beer pours a yellow color with a white head. The aroma is full of rosemary and sage, with a little bit of biscuit malt and some yeast. The flavor is similar, I get a ton of sage and rosemary up front, with some orange and lemon notes coming through as well. There is also some biscuit malt and yeast in the flavor. Medium mouthfeel and medium carbonation.

In short: An original spicy and rustic blond ale. Something you need to try.
How: Bottle 22oz. Consumed 6 months after first bottle rating (so maybe less than six months old if brewed more than once). Bottle sent to me by mcberko, thanks a lot Matt.
The look: Cloudy blond body topped by a small white head.
In long: Nose is not the overload of spices I was afraid it would be, it is actually an interesting mix of cooking spices that include rosemary, basil, Italian seasoning that I put in my spaghetti sauce, and more... The rustic Saison yeast mingles very well with the spiciness and creates an inviting spicy rustic aroma. In mouth the sage is much more prominent and creates that ‘heaviness’ in the flavor that sage is good for when cooking (I know because of my sage-lover wife), there is also a nice thick banana bread sensation (does this beer use lots of wheat?), notes of rosemary thyme, nice farmhouse character, dried countryside flowers. This is a very atypical beer, something that will please some people and turn of others. I personally liked this beer a lot although it upsets me that New Belgium are able to provide their fans with The Trip I through The Trip XI in only a few years while after many many years people like me are still anxiously awaiting the release of Deep Throat VII.

Bottle, shared with my wife. Hazy light amber-gold, with a modest white head that retains poorly. Aroma is sweet and lightly herbal, more yeasty than anything. Sweet fruity palate, green grapes, honeydew melon, with light perfumey sage (none of the earthiness that I associate with fresh sage though). Too sweet and not dry enough to fit my criteria for a fine saison, but as a tasty belgian style ale it was great.

Bomber poured a clear gold with a lasting creamy white head. Aromas of straw, sasge, rosemary, pear and a hint of apple. Palate was light to medium bodied and crisp with a dry finish. Flavors of straw, rosemary, sage and light pear with a crisp dry lingering rosemary/sage finish.

Strong aroma from the bottle of rosemary and Grandma’s lipstick. Monster head when poured into a Duvel glass. Malts and herbs on the nose. Bit of an alcohol bite, leaves a coating in my mouth, and not an insult by any means, this beer tastes like an herbal homebrew. (not a bad one) but I get some of those interesting "wild" esters. Banana, clove, rosemary, yeasty stuff. Medium mouthfeel, slightly tart on the finish. Interesting brew. Tasted @ 47F.

Bottle:   Hazy orange, thin to moderate frothy off-white head, sparce lacing.   Super strong sage on the nose.   Subtle rosemary and peppercorn.   Bright spices on the tongue, sage dominates.   Has a soft floral aspect, but its a bit muted to the sage and soft rosemary that comes up from behind.   Has a breadiness to it that seems thick, but it too is overtaken with the sage.   Feels heavy in body and mouthfeel, despite the carbonation being strong.   Overall an interesting and different Saison, but the sage is to overpowering.   Enjoyable, but it small doses.   A little difficult to finish a 22oz by ones self.
