COMMERCIAL DESCRIPTION
Our Trippel Belgian Style Ale (pronounced triple) opens with a bold blast of hops that slowly gives way to the fruity esters implied by our Belgian yeast strain. The Three Graces hand-painted on the label are Zeus’s daughters Aglaia (splendor), Euphrosyne (mirth) and Thalia (good cheer). In the Belgian tradition of brewing singles, doubles and triples, Trippel is the strongest with the longest fermentation. Remarkably smooth and complex, our bottle-conditioned Trippel is spiced with a trace of coriander.

12 oz. bottle, bought Jan 2011. Sweet and light spicy nose right in the bottle. Pours a bright gold with a touch of rose in my glass, under a half finger of yellowish white foam. That coriander is foremost in the nose when I sniff the glass, but also a slightly heady malt alcohol at play. Taste is just what I needed tonight. A very warming alcohol based on light malts; it could slip into adjunct territory if I didn’t know better. Hops are greatly diminished in a bottle this old, but no regrets. Just lots of that special Belgian aromatic malt, a warm ale ferment, and I’m happy tonight.

UPDATED: FEB 8, 2012 It pours cleanly and with a bright white head. I’m nearly 3/4 of the way through the beer that I’m drinking out of a pint glass - a soft web foam remains from top to remainder. My allergies are ruling the day but I can still smell how sharp this beer is. Unfortunately, however, the coriander advertising has me searching for a flavor that I’m not familiar with. The citrus is prevalent albeit an acrid and slightly unpleasant version that I wasn’t prepared for. I’m not sure I would call this ale, "smooth", exactly. I find it a bit bitter with a light body, thin, fizzy texture, and a bottom half aftertaste that kept me interested enough to not regret the purchase.

Bottle. Pours a clear golden yellow color with a white head. Aroma is of coriander, clove, banana, citrus, white grape, pear and some sweet malt. The flavor is of coriander, black pepper, clove, banana, white grape, pear, breadiness, sweet malt and some sugary notes. The body is medium with a dry mouthfeel. Overall a pretty solid interpretation of a Tripel.

12 ounce bottle into chalice, best by 11/20/2011. Pours clear, yet cloudy, golden straw color with a 1 finger fairly dense white head with good retention that reduces to a thin cap that lingers. Some bits of lacing on the glass, with a nice amount of carbonation streaming up. Aromas of big banana, clove, pear, pepper, lemon, coriander, bread, bubblegum, grass, light tart grain, and yeast spices. Nice and well balanced aromas with good strength. Taste of lemon, pepper, pear, coriander, biscuit, banana, herbal, clove, lightly tart grain, and yeast spices. Lingering notes of lemon, pepper, clove, and yeast spices on the finish for a bit. Nice overall balance of flavors with no cloying sweetness as expected. Medium carbonation and body; with a slightly creamy mouthfeel. Alcohol is well hidden with only a slight warming after the finish. Very drinkable and smooth for the level of alcohol, but it is a bit of a sipper. Overall this is a damn nice and well balanced Belgian style tripel. Nice flavor profile and complexity.

I thought this beer had a pretty pronounce yeast flavor. Definitely had some spice and fruit notes which appeared at different points. Worth a try.
