COMMERCIAL DESCRIPTION
Our Semi-Sweet Plum Honey Wine is a sweet blush wine, full of rich notes of cinnamon, dried fig and honey. This fine sweet blush wine shows a light amber color, with a lovely sweet-spice aroma. It opens onto the palate with heady notes of cinnamon and mace, flowing into a complex mixture of dried fig, raisin and Bing cherry, and ending in a rich honey finish. It is amazing just how complex a wine the combination of tree-ripened plums and wildflower honey can create! Pair this complex blush wine with a plate of aged goat cheeses and fresh figs, or along side sashimi and a bowl of natto.

750 ml bottle to taster. Looks good; a still, transparent pinkish-gold. Smells and tastes of plum and honey with a nice mouthfeel. A solid mead.

Lighter gold color. Some bite to it, but itís pretty mellow. Not too sweet, despite the higher residual sugar. Some spice in there. Not bad.

Poured out of the bottle from the source... Pale pink reddish hued pour, very leggy, with no head as expected... Honey comes through most out ofthis so far. Slightly spiced with mild reddish fruit. A soft subtle smoke almost involved as well... Flavors are more of the same with sweet honey, spice, and mesiym to almost red fruits. Smooth with a fuller body but not too fall to any extent.

Probably the most complex mead I had at New Day. Lots of dark fruit and plum. The honey finishes this wine very smoothly.

This bottled mead from the meadery poured a small sized head of medium sized bubbles that were quickly diminished and left behind a light tan hued body and a light oily lacing. The aroma was fruity and contained notes of plums. The mouth feel was weakly tingly at the start and at the finish. The flavor contained notes of dry sweet plums. Delicious and one I would certainly buy again.

UPDATED: SEP 22, 2010 From the bottle at JK OíDonnellís in Ft Wayne - Pours pink-red and has a sweet aroma of plum, honey, and spice. The flavor is lightly sweet with plenty of plum flavors but the honey was apparent too. This honey wine works. It didnít blow me away, but itís a nice, sweet drink without being cloying, a good after dinner choice. Rerate from Fort Wayne tasting - In better light the color looks closer to golden... itís quite sweet and fruity with a touch of tartness kicking in next. Medium bodied. Bubbly. Good. 7/3/7/4/13, almost the same as my first rating so Iíll leave it be.

UPDATED: FEB 21, 2009 Tasting at New Day Meadery. Amber hue and the aroma was sweet and spicey, The flavor was sweet, cinammon, raisins, honey, cherries, and finished semi-dry. Tingly mouthfeel and medium bodied. Nice, easy to drink mead and worthy of a try.

Out of a bottle at the meadery. Rose blush color and still. Big spicey nose. The flavor has lots of prune, cinnamon and fruit cake with a honey sweetness. Bold flavors that balance the honey sweetness against the fruit. The spice was a little strong for me.
