Nez très fruité aux notes aigres (cerises, cerises aux marasquin, notes de raisins et de canneberges) avec des notes boisées (fût de chêne) et épicées (cannelle). Moyennement ronde en bouche avec un pétillement moyen-fort et croustillant ainsi qu’une texture sirupeuse fruitée et aux petites notes crémeuses. Goût moyennement aigre de fruits (cerises rouges, notes de canneberges et de cerises sûres, traces de raisins rouges) avec de petites notes de levures sauvages lors de l’entrée en bouche et qui progresse par la suite vers un goût fruité légèrement plus sucré (auquel se rajoute des des notes de cerises au marasquin et des traces de cannelle) avec une très faible présence de goût de pain puis en finale l’on rebascule vers un goût légèrement plus aigre avec de petites notes asséchantes ainsi que des notes boisées (fût de chêne) et de houblon herbeux. Post-goût long aux notes sèches, aigre de fruits (moût de cerises avec traces de canneberges) avec des notes de fût de chêne ainsi que de faibles notes amères provenant du houblon. All though this beer has a ton of cherries in the flavor it is has a nice balance of sweet and tart. Ruby red body allowing enough light to shine through to watch a steady stream of bubbles rising and giving birth to an effervescent pink-tan head that diminishes quickly to a froth laying on top. The aroma is much like a cherry dessert. Lots of sweet and slightly tart cherry notes along with sugary, doughy, and cinnamon spicy undertones. The flavor is a dark cherry flavor without much if any tartness. It’s smooth, almost creamy in the mouth, again with some kind of cinnamon or other spice. Very strong tart cherry flavors, mingle with a musty yeastiness and a good sour flavor. Looks beautiful in the glass with its pink head and beautiful bright red hue. Smells like cherries and a little funk. There is a cherry pie flavor that is a little odd in the mix though. Just the right amount of tartness, creamy and rich mouthfeel, that is wonderful with food or with desert. Fills the palate with wonderful fruit flavors, and just the right amount of carbonation. Beautiful!
