COMMERCIAL DESCRIPTION
Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels. Then bottle fermented. This is a funky and very sour beer not for the faint of heart. If you are unfamiliar with sour or Brettanomyces beers you may want to pass this one up!

Tasting at Jack’s RAH Annexe! Thanks to Bruce. Lightly hazy amber beer, small pale cream colour head. Good typical gueuze sourness, wet wood, and lemon but this is a tad on the acid side. Some balance brought by sweet vanilla oak. Light dry finish. Not bad.

Just passed fourth birthday. Mellow geuze that builds in sourness on palate. Smells like an American funky beer. Some apple juice but smooth. Still carbonated and a bit of white head on deep yellow, leaving lace.

Bottlw shared thanks to Lukaduke! Pours cloudy orange with medium head. Nose is a complex funk with mixed musty spirit barrel spice notes and tart acidic stonefruit. Taste is similar with nice tart acidic fruit, musty grain, some barny funk, barrel. Finish is tart fruit funk woody citrus.

Pours a rich golden almost copper color with a finger of gaseous foam that settles out quickly. Interesting brew with some cheesy funk, caramel sweetness and layers of funky stonefruit, sawdust, ginger ale, toasted vanilla, wet wood, and funky acidity. A bit more rounder and less dry than expected but an interesting beer either way.

Bottle at Chateau Jackl, big thanks to Bruce for this ’R’ production, 13/08/14. Lightly hazed orange amber with moderate off white edgework. Nose is cheesey puff biscuits, lemon rind, straw, oaky vanilla notes, tarte citrics. Taste comprises lemon zest, straw, light parmesan notes, tangy citric tinged straw, orange pithdom, light funk, grassy, Medium bodied, fine carbonation. Ok I guess but a little on the cheesey side!

Bottle shared in London - thanks to Bruce. Pours rich gold with a creamy white head. The nose holds Italian cheeses, some caramel, dank citrus fruits. Light flavor with some spices, old berries, bit more cheese, old caramel, candied sugars, some herbs. Medium bodied with fine, spritzy carbonation. Finishes sweet with some acetic twang, bready sugars, subtle cheese, berries, faint caramel. Interesting.

Bottle. Cheers to Bruce (I think). Gold with a small head. Loads of parmesan funk. Little else. The taste is quite acetic. Cheese and used socks. Smoked herb. Lemon. Light body, soft carb. The cheese is overpowering.

Bottle big thanks to Bruce. It pours hazy amber with decent white head. The nose is sweet, earthy, tangy, wood, vanilla, creaminess, lactose and cheese pie. The taste is crisp, tart, green apple, lemon, vomit, sherbet, some acidity with a dry finish. Medium body and fine carbonation. Good mouth-pucker. Pretty acidic though.

Bottle:   Orangish straw, bright, faint haze, lively carbonation, soft sudsy white head, little lacing.   Tart nose, bordering on sour.   Just lots of funky bits happening.   Smells good!   Sour up front, funky, not too dry.   Smooth tho.   Not a real big Gueuze, a bit softer, but clean, a touch dry.   Moderate body and mouthfeel.   A bit woody as well.   Good softer example, clean, but wished it lingered a little longer.   Thanks Bob!

bottle shared by tom10101, thanks bro. pours unclear bright golden with a small white head, some retention and lacing. moderate funk, white wine, white grapes, oak, acetic and lactic, soft bretts, some fruitiness - apples, not the off-flavoured type, pears. average to moderate carbonation, light body - oily, nicely acidic and herbal-grassy finish. enjoyable but a tad linear.
