Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels. Then bottle fermented. This is a funky and very sour beer not for the faint of heart. If you are unfamiliar with sour or Brettanomyces beers you may want to pass this one up!

Courtesy of BOLTZ7555. It pours brilliantly clear gold with thin white head. The aroma is smooth sweet apples and apricot as well as delivering some sugary notes and then moving more toward saltiness and a thin ribbon of sea shore. The taste has an initial pulse of tartness and then moves quickly into a bit of salt, a brine sense, a mild level of apple and pear fruitiness. Behind those notes is a touch of sort of white wine fruitiness and dryness. These notes all play wonderfully together.

Bottle shared by beace @ Jackie O’s. Pours a hazy golden color with a fine white head. The aroma has more fruit than I may have expected. Vinous, oak, vanilla with a bit of acidity. The flavor is vinous (white grapes), moderately tart, oak with some funk. This was definitely not what I expected, but drinkable nonetheless.

Bottle generously shared by Sparky...Eric, you ROCK!!! Somewhat wine-like with lots of tropic fruit (guava, mango, papaya), red grapes, honey, and spice. This one also shows lots of oak, vinegar, and funk...love the level of carbonation that ignites the palate and level of complexity that keeps the palate guessing.

(bottle shared at Dak’s 5000). Pours a cloudy yellow color with thin white head. Aroma is vanilla, wood and some fruit (concorde grape). Taste is sweet and tart. Medium bodied with an oily texture. Nice beer that has some sourness and sweetness in balance.

Thanks to whoever sent this my way, and apologies for not remembering your identity. Heavy carbonation on the pour was the first thing I noticed. Hazy look to the pale golden brew, but alive with micro-activity. Nose was crisp fruit, tons of oak, and funk. Body was really enjoyable, with a liveliness that you don’t often get with the style. Tons of funk in the taste, quite nicely so, but it came across light and fruity in many places, like champagne, or Ithaca Brute if you prefer. Definitely a goodern.

500mL bottle. Poured clear, bright golden with stark white head.. a little rising carbonation.. fairly lively. The aroma was sour and funky, with lemon rind, vinegar, and horsey notes over a nondescript pale base.. touches of oak and cherry too.. very engaging. The flavor opened sour with lemon rind, metallic notes, and apricot.. tart sugars across the middle.. a touch grainy on the back end, but with enough sour stuff to keep it interesting.. funky with more fruits and lactic sourness on the finish. Medium-bodied with lively carbonation on the palate.. funky and very dry.. I dug this.

11/1/10. clear gold color until the last two pours. faint aroma... peaches, apricots, crab apples, dusty grain and wood. the flavor is extremely and unexpectedly sour...tart green apples, unripe fruit, wet grain, damp wood, spice and lemon. crisp, clean and way too easy to put away! 7/3/8/4/16

Woody funky sour somewhat gueze nose. Woody with some borbon nose. Goldennice.woody sour barrel lemon bourbon funky tart$m nice stuff but not authentic due to bourbon woood. Interestinging.

Bottle shared by JCB. Golden pour with a small white head. Nose is tons of oak and vanilla, like bourbon almost. I swear I got some bubblegum, which was unexpected. Some sour apple and grapefruit as well. Tart and lovely.

Shared by JCB. Kind of hazy straw gold pour with one finger of fizzy white head. Lots of oak in the nose, sharp raw American oak, very spicy. Some tannic character and a nice acidity. Mildly acetic as it warms up. Very oaky in the mouth as well, almost whiskey-like. Tart and tannic with notes of vanilla.
