COMMERCIAL DESCRIPTION
Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels. Then bottle fermented. This is a funky and very sour beer not for the faint of heart. If you are unfamiliar with sour or Brettanomyces beers you may want to pass this one up!

Woody funky sour somewhat gueze nose. Woody with some borbon nose. Goldennice.woody sour barrel lemon bourbon funky tart$m nice stuff but not authentic due to bourbon woood. Interestinging.

Bottle shared by JCB. Golden pour with a small white head. Nose is tons of oak and vanilla, like bourbon almost. I swear I got some bubblegum, which was unexpected. Some sour apple and grapefruit as well. Tart and lovely.

Shared by JCB. Kind of hazy straw gold pour with one finger of fizzy white head. Lots of oak in the nose, sharp raw American oak, very spicy. Some tannic character and a nice acidity. Mildly acetic as it warms up. Very oaky in the mouth as well, almost whiskey-like. Tart and tannic with notes of vanilla.

Bottle, thanks JCB. Golden with small white head that fades. Notes of spicy oak, starfruit, grapefruit, some funk. Lacks the complexity of some its better Belgian cousins, but its very drinkable and tasty.

500mL bottle. Thanks for the trade, Kevin. Crystal clear dark golden pour, with a fast fading crisp white head. Aroma has a unique salty, briny lactic funk to it, that reminds me, unfortunately of some of my odder sour homebrews (e.g Kvass). Sweaty. Fresh tangy flavor that tastes little like Gueze to me, or at least filtered, denuded Gueuze. NG’s sour beers are so plain and simple! There’s no softness, complexity, or nuance. It’s just dialed-in sourness, crystalline sugar, and a bit of fruitiness. This one definitely steps up the level of sourness and dapples the faintest hint of acetobacter in, but it’s a far cry from the influences.

A: Light golden wheat colored body. Moderate white foamy head.

S: Bright lemon citrus, a bit of oak, some sour apples.

T: Similar to the nose clean citric acidity. Oak, sour apples, green grapes. Missing the musty complexity of the Belgian gueuzes.

M: Light to moderate body. Fairly effervescent. Sour finish, but not mind melting.

O: A very nice American take on the "gueuze." Ultimately, it falls short of the complexity that makes the best gueuzes special.

Bottle thanks to StFun. Clear yellow pour, plenty of effervescent carbonation and a lasting head with a good and funky sour apple/light lemon aroma. Flavor is acidic lemons, peaches, slightly cheesy and finished with a very tart and biting aftertaste which lingered in my stomach for about a half hour. Solld beer, I really hope they make this again.

Bottle: The aroma consists of apples, light lemon, and a touch of glue. It pours a transparent golden-orange with almost no head. The flavor starts with musty apple. The finish has light-moderate lemon and a hint of acetone and vinegar. Light-medium bodied with minimal carbonation.

Tasted on 3/27/11 from a 500mL bottle. Pours hazy yellow straw with an average white head that leaves thin lace with a thin collar after a quick recession. The nose is sour and funky with lemon, vanilla, some spices, and a bit of red berry fruit as well. The flavor is quite sour with tart lemon, vanilla, and the same red berry along with a wheaty malt flavor. The body is light with sparkling carbonation and a long tart lemon, vanilla, and tannic finish.

Bottle thanks to JohnGalt1. Pours out cloudy straw topped with a white head. Aroma was of sour, tart, grapes, and some oak. Taste was more of the sour green grapes, oak, some Brett, and a little citrus.
