Master Brewer, Daniel Carey, sourced the Brett yeast that boldly frames this refined and complex strong ale. First coddled in our Oak lager tanks and then slowly matured in bourbon barrels. Robust yeastiness assaults the nose upon pouring the amber liquid. This quad has a very complex fruitiness that’s tough to pin down...tart dried cherries, plums, vanilla, oak, raisins, and maybe a dried orange peel. But mainly huge brett yeastiness...along with a heavy yeast sediment in the final ounce at the bottom of the bottle. I like it.

Poured a clear amber color with a small, off white head that left nice lacing on the glass. Aroma of caramel malts, raisins, leather, black cherry, brett, vanilla oak, and alcohol as well. Taste of more cherries, vanilla, toffee malts, dark fruits, citrus fruits, and alcohol in the finish.

NorCal tasting June ’07 - This beer really carried a Jekyl and Hyde character. Upon popping the cap, a really unpleasant aroma began sneaking out of the bottle. Upon pouring, the aroma remained and what it was was some kind of cheddar cheesy nose. Now, I like cheddar. I do. Just not in my beer. So originally, my rating on the aroma was really low but after awhile the cheesy character went away and was replaced with some subtle vanilla notes, alcohol and some sweet malts. Nothing extraordinary, but better than cheese. Appearance was a bright orangish/brown combo, good head with nice lacing. Mouthfeel seemed just right, a bit lively but not overblown. Flavor was a bit of dark fruit, wood, a bit of bourbon but suprisingly there wasn’t any domination from the wood or bourbon. Decent beer, but a bit of a let down since I’ve come to expect great things from NG.

A gift from Skyview. I didn’t realize this was bourbon aged, and that is a good thing. It has a very yeasty, Belgian like aroma with just a hint of brett and some light spices. Not especially complex in the flavor. Very sweet, light spices and a dry finish. Much more of a quad than at Abbot. The oak is definitely there in the flavo, as well as light spices that I can’t pin down. Some sediment in the bottom of the bottle.

Light amber coloured beer with a small head. Fruity aroma, couldn’t really pinpoint which fruits, though. More fruit in the flavour, some cherry, vanilla, alcohol.

Bottle. Thanks to Artusory for sending me this. Pours a clear amber body with thin head. Aroma is of cherry, light oak, some dried fruits. Flavor had alot going on. Dried cherries, vanilla, light fruits with a slight alcohol burn. This was a great sipping beer while relaxing on a cool night in June.

Clear auburn body with a small off-white head. The aroma is cherry, light horse blanket, pineapple, candi sugar, honey and bread. The flavor is moderately sweet, lightly tart, with caramel, cotton candy, spice, cherry, raisins and vanilla. Medium/full body is moderately carbonated and round with a drying finish. Very nice sipper.

Bottle. We had two different bottles of this. Deep copper in color with no head. ARoma is fruity. Metallic and buttery flavor. Buttery tasting. Sweet. Metallic notes. Dry finish. Ok.
