Master Brewer, Daniel Carey, sourced the Brett yeast that boldly frames this refined and complex strong ale. First coddled in our Oak lager tanks and then slowly matured in bourbon barrels. Bottle courtesy of Juelze, thanks again! Orange -red pour with a light tan head. Aroma of brett sourness, vanilla, light oak, faint candied fruits and caramel malt. The flavor didn’t give out as much sourness as the aroma did, rather more bourbon elements came out coupled with caramel malts. Medium body...sweet and woody with a sweet kinda roasty finish. Pretty neat Quad.

Bottle shared by nolankowal: Pours a clear amber color with an off white head. Aroma, caramel, some spice, molasses, and some fruits, with a nice underlying funk to it. Flavor, oak and vanilla, brown sugar, caramel, some spices, and a yeasty/bready character that went really nice with the light sourness. This was damn good.

Bottle courtesy of moejuck. This is a subtle quad- doesn’t hsve the huge candy sugar/alcohol punch. Tinge of barley wine notes in the flavor. Good nonetheless.

An elixer, in every since of the word. The consistency is sticky and the taste is fruit, greens, and yeast. Earthy tones, but they get subdued quickly by a monstrous wave of alcohol.

Pours a burnt orange with little head. Nose is sour, some fruit. Taste- metallic taste with moderate carbonation. Fairly boozy (upon further research I see its 11% so that explains it), with a sweet sticky consistency. I was hoping for more brett flavour and advertised on the bottle, but couldn’t find much. There is some sourness, but I think the booze kicked the crap out of the brett. Cherry fruit is prominent, along with other dried dark fruits. Some wood from the bourbon, but understated all and all. This is a very complex brew- lots going on which I normally enjoy, but I just can’t get into this one. Not a fan of the finish of the beer- tad too hot. Perhaps it needs more time to mellow out. I will cellar my remaining bottles and revist in a few months.

Brett on the nose, funky barnyard, fruity with some dark fruit and caramel. I’m very surprised at the strength of the Belgian character. Some oak, lots of yeast character. Interesting. Medium-amber in color, very clear with a thin, off-white head. Flavor is sweet, with raisins, brown sugar, cherry pits, caramel and dried fruit. Warming with a hint of sourness (acetic acid) but it is very subtle. Then a buttery oak flavor comes through in the finish, perhaps a hint of bourbon and an almost astringent finish. Full bodied, creamy texture, fairly sweet, while staying dry in the finish. The main flaw is some noticeable alcohol. An interesting, complex beer.

(Bottle) Pours a nice amber color with a moderate amount of head. Good lacing. Aroma of sweet grapes and sugar. Taste includes oak and light spice. Overall, the alcohol is rather well hidden under everything else that’s going on here. Crisp, dry finish. A good brew!

Pours a hazy raspberry color with a white head. Aroma is of tart fruit. Flavor is malty, with tart raspberry finish.
