Some wheat and certain lactic acid bleed through. Delightful and complex. Pours a very clear straw gold, with a creamy soap of white lacing nicely. Flavor is rich and developed, but marred by a weird edge of plastic. This starts off with a lot interesting lactic character, bordering on lambic funk, but maintaining that spritzy wheat sugar throughout. Selzter carbonation carries flavor well. My gums pucker in acidic delight. Plastic-like off flavor seems to have faded. Otherwise, a nice dense, well-balanced B.W. shines through. I’m not sure I really gather a lot of the fruit sense, it’s pretty subtle and well integrated. There’s something to be said for that. Certainly it lends to the complexity and density. Aroma is nice barnyard funk, sour, and light fruitiness. Flavor is refreshing and tart with a light earthy undertone that adds a little complexity. The aroma has some tart white grape and mild grains- pretty simple. The body is crisp and light, with a solid tartness in the flavor. Has some white wine vinousness, which is followed by some mild, residual grain flavors into the finish. Has the tartness, but lacks and complexity. The aroma on this threw me off initially, as it comes off kindof funky and I almost thought it was a bad beer. Aside from the aroma everything else about this rocks. Flavor is soft, fruity, tart with a medium body, flavor almost comes off as champagne like. Palate on this is super clean, like drinking a glass of water. I liked this a lot and this is going to be my next homebrewing project.
