COMMERCIAL DESCRIPTION
Little John’s local bees create a spring wildflower-honey that lends a sweet, earthy complexity to a traditional style of beer (triple) with a balancing snap of ginger in the finish.

Bottle, sampled in a large tulip and a Chimay trappist glass, this Tripel had a clear medium-dark red pour with dark orange and light golden brown colors at the edges of the glass, the pour gave a one finger head or so of off-white colored bubbles and ring, the effervescence in the glass was around medium, the Chimay glass gave more effervescence, (I think more carbonation in this ale would help), there is some lacing on the sides of the glass, and there was a thin film of medium brown sediment in the bottle, this ale had fruit citrus aromas (not big but not small either) with a honey sweetness in the background, faint spice and floral notes, and some candy like sweetness, there is faint pepper and herb in the background (maybe from the Ginger?), yeast and faint Banana comes out as it warms, there were light Pale malt flavors with light citrus fruit, malt and honey sweetness, a little Cherry flavor, I do not taste the Ginger, a little or more pepper after the finish (with a little bit of herbs), I noticed a minor amount of alcohol on the palate (the beer was not cold, it was cool), when the glass was at room temperature, the alcohol was not offensive, this drink starts sweet but ends dry and bitter, the mouth feel is around medium, I think a little more carbonation would help to make this drink lighter on the palate and improve the presentation.

[3694-20110416] 1pt6floz bottle. Citrus ginger aroma has just a hint of chemical cleaners. Slightly hazy, amber brown body with a medium-lasting creamy off-white head. Grainy flavour has just a little yeast and mild bitter citrus notes. Medium body. Odd floral characteristics. (6/3+/6-/3/11) 2.9

Sample at a tasting at IlliniSmitty’s house. Color was a glowing gold, Aroma was tons of sweet oranges and honey. flavor was very week, pale malts with a little honey twist. Another disappointment from New Holland.

Deep amber-golden pour. The nose is intensely honeyish and gingery. Lots of pepper and a really great honeyish cooling character. A bit of light wintergreen character. Fairly soft caramelly malt with a touch of light sweet fruitiness. Fresh and a little bit warming but it has lots of character. Gingery and spicy. It’s really tasty stuff.

Aroma: Pleasant blend of sugars , yeast character and alcohol.7+
Appearance: murky amber with larger beige top. 3+
Palate / Taste: Medium bodied. Mineral lighter hints on top, earthy with alcohol dryness. Mid accented by honey feel and yeasty notes. Finish rather dry.

2011-04-17. Lightly hazy amber body with a nice creamy beige head. 3+ Mild ginger in the aroma, honey, yeast. Flavour is on the sweet side, honet, hints of ginger around the edges, light yeast character. 7+ Smooth average to medium bodied palate. 3+ Fairly sweet overall, much more so than a traditional Belgian triple, and the alcohol is quite well hidden. Higher alcohol beeverage, a tripel? Ginger in the aroma along with yeast, ginger is the dominant taste. Hops infused with honey. Ginger comes through in every sip, unusual, bit decent. Good head, cloudy body. Bold herbal tea.Above average mouthfeel.

On tap at Bodega into a flute glass. The name of this beer is half right, tons of honey but not a tripel except for abv... Pours a really dark honey gold, darkest tripel I’ve ever seen... The taste and aroma are both way to sweet from start to finish. Totally dominated by sweet honey, way to sweet, this is very meade like or a pourly done honey beer. Not subtle or complex, nothing worth trying here.

On tap at Kraftwerk. Pours a deep golden amber color with burnt orange hues when held to a light source and a one finger off-white head that has decent retention, slowly fading into a lasting ring. Sporadic spots of lacing left behind. Slightly earthy, spicy aroma with hints of estery fruit and bubblegum. Floral and perfume like with hints of pepper, coriander, light berries and cherry. Medium bodied with a good balance of earthy tartness, zesty spice, bready yeast and crisp light fruit. Slight creaminess adds to the mouthfeel and complexity. Hints of coriander, ginger, pepper, apple, strawberry and cherry. Well balanced and pretty quaffable with a slightly dry finish.
