Incorrigible celebrates the beauty of mischief. Wild yeasts and bacteria run free in our sour-aging cellar, the House of Funk, creating vibrant sour and acidic character in this delicate, yet complex wheat beer. The refreshingly tart session beer will tease your palate with a subtle, layered nuance.

22 oz bottle. Pours a clear golden white wine color with wisp of white head. Aroma is aromatic funk via Brett, oak, sour funk, and slight vanilla. Flavor is acetic upfront with puckering sourness via lacto with oak, white grapes, and a pleasant dry finish. Medium bodied, active carbonation, solid.

Bottle shared by RussianDragon. Beer and music. ¿Que hora es? The beer is light golden and clear with nary a trace of head. Aromas of white wine, subtle peach character, apple, grape skin, oak, brett. Apple juice and white wine. Like communion...sorta. Light acetic character. White grape juice. Light in body with some prickly carbonation in the back end. Let’s go for a walk.

Basic sour with some nice tartness, high acidity, and some shock tart like flavors. Not a ton of malt body, but some nice flavor.

At the brewpub. A berliner weisse, I was wonder which style this would show up under. Tart and quite funky very champagne like. Tastes good despite strange smell. Serving: tap

650 ml. Pours a clear orange-amber with a small spit of enduring foam. Nose is big with funky cheese and tart white grape must. Taste is the same components but the tartness is more in charge. The grape tartness later turns to more of a spicy-tart cherry with a squeeze of lime, and the white grape and funk are pushed out to the long finish. I also get a bit of sweaty saltiness and brown rice flavors. I finally notice a bit of oak in the long finish after about 12 ounces. Light-medium body is well to the dry side and has lots of fizz.

A beautiful golden pour with little head leads the way to a subtly complex, crisp and refreshing brew that has the perfect sour bite. This beer is unique and some won’t be able to deal with it, but that is the price you pay when your on top of the game. Awesome.

Small alcohol and small flavor but good for what it is. Small bit of banana and dough in the finish.

750 mL bottle. Pours a clear bright golden with a short-lived white head. Tart, sour green grape aroma with a bit of brett character. Flavor is sour, generally a lactic sourness, saltine cracker and bretty funk, green grape. Really very nice!

A very good Berliner wiesse. Aromas are quite funky. Lots of white wine characteristics. Lemon, tropical fruit, funk, sour. Finishes crisp and dry. Delicious.

A clear golden beer with a rapidly disappearing head. The aroma is light grain and fruity vinegar. The flavor is tart white grape and acidic. Very tasty and refreshing.
