Bottle. Dark amber-brown with a big beige head. Spicey aroma with yeast and dark fruits. Very yeasty flavor with sweet malt and subdued citrus and herbs. Rich and complex. Alcohol’s there, but it goes down easily.

750 bottle. Pours thick reddish brown with tan head, looked murky but clarifies quickly. Sweet pruny and date sugar aromas, lots of dried fruits and candied orange peels. Nice body, not too carbonated, not too thick. Great sweetness. Not sugary at all. Naturally fruity and mild, well-integrated sugars backed by lots of malt. The spices and herbs linger in the background adding depth and cutting the sweetness. Gets hotter as it warms...more alcoholic, that is. It’s nice, there is something to be said for its relative simplicity.

2002, This poured a mahogany color with a small off whte head and some lacing. Rather weak sweet aroma, which also included some clove spice, and maybe even alittle chocolate. taste was orange, some licorice, certainly spices were noted here. This had a very lively, bubbly mouthfeel. Alcohol warming on the way down.

750ml Bottle: Aroma of dark ripe fruits, alcohol, raisins, slight curacao, slight hops, and light yeast. Poured brown in color with a large, fizzy tan head that greatly diminished but lasted throughout. Cloudy. Sparkling. Flavor is light to medium sweet and slightly bitter. Tastes of raisins, dark ripe fruits, light chocolate, malts, slight curacao, light brown sugar, slight bubblegum, and yeast. Medium to full body. Slightly sticky texture. Lively carbonation. Lightly sweet, malty, dark ripe fruit finish.

Limited Edition 2007. dark red ruby brown with a scant white head. Candy aroma with faint caramel. Medium effervescent mouth. Malty flavor with spices. Very complex, my favorite Christmas ale during a 9-beer tasting of various Belgian Christmas ales.

UPDATED: NOV 29, 2008 (Bottled, 0.75l, re-rate) Very nice, deep red color with a large, foamy and tight, beige head. Malty, fruity, toffeeish, salty and sweet nose with lots of anise. Sweet-malty, yeasty, quite bitter and hoppy, fruity, slightly spicy and alcoholic flavor. Very smooth, foamy-carbonated, medium-bodied, bitter and slightly slicky-alcoholic palate. A quite nice and pleasant, beautiful dessert brew. A bit strangely bitter, but that is gone with the yeasty part added. Probably best, if you mix the yeast in from the beginning. Anise really shows up when warm.

This was my New Year’s Eve beer, served in a champagne glass of course. A pretty good way to end the year! Pours a dark reddish-brown with a medium thin light beige head. Lacing is pretty good. Aroma of herbs and berries. Flavor is a rich medley of fruit, alcohol and a little malt. Very good!
