Bottle. Huge fizzy beige head that lasted for a very long time. Excellent display of lacework. Somewhat clear and sparkling body with a mahogany color. Huge spicy and fruity notes. Cinnamon, caramel, mix of dark fruit, pepper like notes, almost soy sauce like, yeast. I just have that Christmas feel to it. Full bodied with an average carbonation and hint of alcoholic texture. Flavor was moderated sweet with light notes of bitterness. Finish was spicy sweet and somewhat liquorish lingering. Excellent Christmas beer.

2003 Vintage; Tasted December 6, 2004; Rating #1000 Dark reddish/black color with a medium head. Bready aroma with a hint of fruit, possibly cherry. Solid malt body with a touch of winter spices (nutmeg, cinnamon, maybe ginger). A little dash of herbs are there too, but not to the extent as, say Rochefort 10. The alcohol is not particularly well hidden. Ralph says: "It tastes like burning!" Still, a damn fine brew and a good one to celebrate 1000 with!

2007 bottle. Dark brown with a frothy tan head. Nice caramel, candi sugar aroma with spices. Light to medium body. Sweet brown sugar and spices mixed with a dry bitter alcohol twang to finish. Very good aged xmas beer.

Aroma consists of dark malts, fruit and anice. Bit bready and some yeast. Dark brown coloured with a lasting, off-white head. Taste is sweet, malty, anice again. Some bread. Balanced taste.

Aroma is yeasty and sugary
Taste, malty, dark fruits, and candi sugar.
Comes off with plenty of good "holiday"
spices, making this one a definite treat for the season.

Pours a slight hazy brownish amber with an average fluffy off white lacing head. Aroma is spicy, orange, a little metallic, peach pie, nice and fruity. Flavor of spicy yeast, orange, a little roasty malts. Alcohol was non-detect.

Bottle: Dark burnt orange, brownish, large foamy beige head, lovely lacing. Musty aroma, semi-sweet, soft dark pitted fruit. Spicy start, rich citrus bitterness, earthy, with minor dark pitted fruit. Nice body, moderate mouthfeel. Earthy/musty finish, not as flavorful as the start. Good, but compared the Gouden Carolus Classic before it, not as tasty or robust.   Lingering yeasty/breadiness after the finish.
