This big-shouldered brew was very pleasantly shared with my son-in-law as we sampled Costa Rican ceviches. (Probably not the greatest pairing, but still fun!) Big alcohol, deeply roasted malts, dried fruits, citrusy hints, coriander, yeasty spiciness, brown sugar, and plums. Really well made and exuding quality. This is a very fine winter warmer.

2003 Vintage - Dark ruby, mostly clear body. Big creamy light-tan head. Looks very nice. Lacing is superb. The aroma is coriander, citrus, and thyme. The thyme really comes out in the flavor. Malt backs the spice up, minimal hops. Sweetness is big but not overpowering in any way. The thyme keeps coming back, if you are not a fan of thyme you may not like this one. Sticky body with a decent amount of alcohol in the finish.

2006 Vintage - What an amazingly simple, yet tasty beer. Okay, maybe simple is the right word. But it’s not barrel aged, or a "super premium" beer. Just a well made, highly enjoyable Belgian beer.

The beer pours out a dark, cloudy brownish/purple color with a nice two-finger thick light tan head. A mesmerizing aroma butter, plums and mashed raisins. Vanilla and overripe bananas also show up. Where’s the 10% alcohol? Mouthfeel is crazy smooth. None of that overly harsh carbonation I find in some Beligain beers. Smooth as silk here. Flavors are a tongue-warp to try and get them all. Dark fruits like dates, rasins and plums abound. Caramel, chocolate dipped oranges, oak and various spices play thru. Highly recommended.

Pours dark amber with a mostly receding tan head. Aroma of pepper, spice, bubble gum and cherry. Taste is caramel, toffee, bubble gum, spicy phenolics and pineapple. Mouthfeel is full to heavy bodied with lush carbonation.
