2003 Vintage; Tasted December 6, 2004; Rating #1000 Dark reddish/black color with a medium head. Bready aroma with a hint of fruit, possibly cherry. Solid malt body with a touch of winter spices (nutmeg, cinnamon, maybe ginger). A little dash of herbs are there too, but not to the extent as, say Rochefort 10. The alcohol is not particularly well hidden. Ralph says: "It tastes like burning!" Still, a damn fine brew and a good one to celebrate 1000 with!

2002 vintage: Deep brown body with a thick, creamy tan head. Some rockiness and lacing. Aromas of oranges and malt. Very malty backbone of a taste with a bit of a hop aftertaste. Alcochol is apparent and warming. Well carbonated to help with the high alcohol (balance). Might pick up another bottle and cellar it along with my Bells Old Ale.

UPDATED: JAN 26, 2004 2003 Vintage, 750mL bottle, served in a La Chouffe Tulip at aroudn 50ºF. Tawny color, pellucid with a creamy tan head. Light musky hops, sweet caramel with a touch of cinnamon & clove. Flavor has a touch of alcohol and the traditional belgian flavors to satiate the likes of me. Finishes with a medium body and ends rather briefly. I thought this was a very good winter Belgian and would like to be able to get it in town here in Boise.

75 cl Bottle. Dark red-brown, not the greatest head. Tidbitty nose, along with dates, figs and almonds. Body is huge. Salty at first, then almond plays first violin. Very malty, with a dried fruit feel and in the finish the residulal sugars show off.

3fourths (6218) - Boulder, Colorado, USA - FEB 15, 2004
Deep brown, almost close to black. Has an aroma consisting of bananas, alcohol, dark malts and some spices. Very stong flavor of alcohol consumes the mouth, though at the end of the drink and through the finish there is a pleasent roasted fruit and flower quality similar to a dubbel. Overall, quite strong, but very flavorful.

Nice dark opaque color, almost black. the cura. peel is evident in the aroma, malts, hops. The flavoris very sweet and alcoholic. the fruit is very pervasive in the flavor, the belgian banana is most certainly there. The finish is somewhat bitter.

2006. I have yet to be disappointed by a Dachouffe beer. This is sweet and malty. There is lightly fruit and a solid base of sweet malt with the hops no where to be found. It might best be described as a classic Belgian strong; it doesn’t try to push any boundaries or make you think too hard. Dark brown and medium carbonation.

Silphium (2711) - East Lansing, Michigan, USA - FEB 24, 2004
2003 vintage. Poured deep red-brown with a creamy medium light tan head leaving nice lacing on the glass. Aroma had a touch of orange peel, yeast and dark sweet fruit. Flavor was classic Belgian Strong, with a yeasty, bready beginning leading to fruit development and perhaps a hint of cherry in the aftertaste, supplemented by a touch of orange peel and alcohol in the finish. Sweet and fairly complex, but not among the best examples of the style; there is nothing groundbreaking or innovative about this beer, but it is still tasty.
