For those who aren’t afraid of big and bold beer! Made with a blend of roasted barley, chocolate and amber malt, this Imperial Stout has many deep flavours of rich and dark fruit and is naturally carbonated to give an incredibly smooth finish.

Cask at Vankleek Hill’s/Beau’s Oktoberfest. Orangeish opaque brown with a short lasting beige head. Smell is roast and chocolate. Taste is roast, chocolate, vanilla, alcohol. Lots of dark chocolate and citrus bitterness in the finish. Full bodied, sticky, velvety mouthfeel. Definitely the highlight of my tasting session!

Pint on Tap at Imbibe in Kitchener. I was warned when ordering that it is 8.5%. Very dark brown, almost black with decent beige head. Roasted malts and mocha and a little sweetness that belies the strong alcohol content on the nose. Lighter feel than I expected in the mouth, but still very good. taste is the same sweet roasted malt and slightly bitter coffee that showed up in the nose. Overall, an excellent stout.

Bottle: black beer with tan head. Dark fruits, espresso, and a bold malty aroma. Rich, complex flavours of roasted malts, dates, cocoa, and yeast. Oily mouthfeel with a long sweet bitterness in the end. Excellent Imperial stout.

Bottled samples from the Brewery: poured a pitch black ale in the tulip that defies light to pass through the glass with all but slight ruby high lights. Thick sticky two finger deep cola-colored meringue like cap. Modest natural carbonation. Aroma is well defined and becomes more pungent as it warms: fairly complex nose to it with amalgams of dried fruit, chicory, coffee, cocoa, ripe fruits, malts, nuts and some grassy notes. Great aroma, fills the room. Silky mouth feels, rich rounded flavor with a slick mouth feel. Taste profile starts with rich roasty malting and a chicory-cocoa presence that pummels the palate as the complexity of dried fruits, dark roast coffee, licorice, hazel nuts and resinous hops work the edges and back of the palate. Finish is long, drying, bitter-roasty and luxuriously smooth. As it warms it gets a port-like discernment in nose and palate. A world class Imperial stout from a solid local craft brewer. The beauty of this Impy is the way it is dry and smooth in the finish, verrrry drinkable! I can hardly wait to try the oak barrel aged version of this in a few months’ time.

Poured deep, dark brown with a disappearing beige head. Aroma of dark chocolate, dark fruit, roast malt and coffee. Full body, flavour much as the aroma. Impressive for the ABV.

UPDATED: JUN 4, 2013 341ml bottle from John at the brewery, shared with JB84, Kish84 and Jeremy. pours dark brown with a small tanhead. nice dark malt, tar, and maple nose. light bodied without much flavour. pretty wimpy imperial stout but not a bad beer. light a bigger version of the NB maple porter. New batches of his have improved significantly. Currently the best readily availible impy in Ontario. This brewery has come a really long way in th last few years. If they keep trending this way they ill be one of th top 5 breweries in h province. Jet black with a small tan head. Roasted malt with ample hopping in th nose. The flavour I similar. Cold use more body but as I said this is much improved over early batches. Get some.

I tried this beer on draught on December 30, 2011 at "C’est What" in Toronto, Ontario, Canada. The beer poured a solid dark brown with black edges and a creamy brown coloured cap. The aroma is roasted malt, coffee, and chocolate with hints of bourbon. The mouthfeel was full bodied with medium carbonation. The flavour was roasted malt, lots of coffee, and a splash of vanilla. The best Nickel Brook beer I’ve had to date.

Draught pint at Rhino. Deep ruby-black with a dark tan head. Very inviting aroma of roasted coffee, charred oak and burnt toffee. Medium bodied with moderate carbonation and smooth back-of-throat feel. Big but balanced flavour of oak, caramel, dark cocoa, dark roasted malt, with lingering licorice and a pine resin backnote. Menu listed this as 5.5%, but I later found it that it’s actual 8.5%, which explains why my head spun a little as a stood up. Could benefit from a slightly bigger body, but otherwise, this is a pretty nice impy.

Iechyd da bra. Thick black, syrup pour with a thin quick dissapating tan hrad leaving a cling lace. Very bold roasted malt chocolate aroma. Delicious flavour of roasted malt, chocolate. Great texture with a pleasant alcoholic kick. Slight herb hints. Very nice.
