COMMERCIAL DESCRIPTION
Three distinct Trappist yeasts – one earthy, one fruity, and one spicy – combine to produce the unique personality of this Belgian-style pale ale. Zesty hops, gentle malts, and a few vanilla beans provide a crisp, smooth profile, while the trio of yeast strains ferment the beer into an elegant harmony of flavors. From chaos, comes Trifecta.

Bottle at Ølbutikken - shared with the Swedes. Clear amber a white head. Knækbrød. Fruity. Ok bitterness. Honey sweetness. Light herbal notes. Red berries. Ok. Some yeasty notes.

Bottle from Kappy’s in Falmouth (Special neck tag, Kappy’s #2 Barrel series). From Night Shift website: Batch #7. Aged in a Knob Creek barrel. (8.3% ABV). Pours out a murky burnt orange color. Thin frothy head that quickly goes to lacing. Aroma of oak, vanilla and char. Flavor of vanilla, sweet raisin notes, char and yeasty dryness. Smooth texture, very easy to drink. Lingering sweet plum and charred vanilla flavors.

UPDATED: OCT 10, 2012 The pour is opaque with a thin head. The nose is slight for the yeast used. Belgian yeast can give a very prononced nose in a pale. The taste is Belgian with a certain harshness not attributable to hops. There is hops and the harshness comes before the hops. A certain sourness in a pale? Is it enjoyable? Yes! Is it a Belgian Pale Ale? Tell me. A growler from the brewery and tasted at the brewery. From a 2.1 to a 3.3 750 ml bottle, filled on 5/8/12, Batch 5, 7.1% ABV, on 10/10/12. Nose is stronger more malty and a hint of vanilla. There is a smoothness to the beer that was absent in prevuious tasting. Age this beer. Trifecta: three friends, three Trappist yeasts, and the Holy Trinity - it’s the Trappist connection. Father, Son, and Holy Spirit. Praise God for the Trappists and Belgian beer!

Until reading the description I did not know there was vanilla beans in this. Would not have guessed that. Overall easy drinking, didn’t eave seem like 7%. Crisp, clean, some bitter hops balanced well with the yeast and belgian style sweetness. A bit of citrus, a hint of wheat too. Pretty good.

Cage is ridiculously difficult...Pours hazy deep gold into a tulip. Off-white head crackles and recedes to nothing. Sweet caramel, candy corn and marshmallow aromas. Thin with a mildly sharp carbonation. Sweet yeast, bready caramel and tree fruit front to back and through the sweet, medium length marshmallow finish.
