Three distinct Trappist yeasts – one earthy, one fruity, and one spicy – combine to produce the unique personality of this Belgian-style pale ale. Zesty hops, gentle malts, and a few vanilla beans provide a crisp, smooth profile, while the trio of yeast strains ferment the beer into an elegant harmony of flavors. From chaos, comes Trifecta.

Bottle courtesy of Jay at Paul’s July 2013 tasting. Pours a light ambe body with thin lacing. Aroma is malt, spice, banana and light bitter hop. Mouthfeel is medium with notes of grain, malt, spice, clove, banana, bitter hop and light vanilla.

Pours cloudy amber with a thick off white head. Smells strongly of spices with a hint of vanilla. Tastes different than I expected. The vanilla is disappointingly subtle. The strongest flavor is spice with some bitterness. Mouthfeel-Crisp and slightly carbonated. Overall-Decent beer. I had hoped for more vanilla.

Bottle that I took to Paul’s housewarming tasting. Pours a lightly hazed amber orange with a medium to large sized white head. Fuzzy musk with a bit of funk and yeast. Musky, warm yeast and tart vibrant musk with a bit of pungent acidity. Musky, faintly acidic, warm musk. Tasty, chewy wheat, long funky banana infused yeast.

Sampled at the brewery. Pours cloudy golden with an off-white head. Aroma of spicy yeast, caramel malts, light vanilla, and light hops. Flavor the same. Average texture. A standard Belgian ale with the vanilla not really adding anything.

750ml bottle. 7%. Batch # 2. Bottled on 03/12/12. Stored in my cellar for almost a year. Pours a hazy amber with a short lived white head. Alcohol on the nose, dried fruits, light caramel, apple, and yeast. The taste is very heavy with notes of well made alcoholic apple cider, dried fruits, faint dried apricot, well balanced with some tangy acidity, dough, caramel, and some spice in the finish. Honestly, it tastes like a cider/Belgian hybrid. This is excellent. I kind of love it. Well done!

Cold 750ml corked bottle: Pours a medium, hazy orange color with a fair sized ivory head. Aroma is of light malts and fruits with notes of grass. Taste is predominantly of yeast with light grains and citrus. Light to medium bodied and crisp with ample carbonation. Ending contains some sour and bitter notes.

Perhaps I sat on my bottle too long, because I didn’t really get anything resembling what I expected. It would be hard to describe the flavors, something like perhaps what I imagine burnt granola might taste like, but overall the beer, while not undrinkably awful, was certainly not "belgian pale ale with vanilla beans" tasting.
