Special Release Series. Babylon is an English take on an American style of the traditionally English India Pale Ale. Originated for the long voyage from England to India, and adopted as the quintessential Northwest beer style, IPA’s have a strong presence in the modern craft beer scene. This big Double IPA is influenced by its English roots, but firmly planted in the modern stylings of Northwest brewing, and enjoyable to hop enthusiasts everywhere!

Marris Otter malt from the UK was used along with Biscuit malt to create a rich, nutty backbone to this super hoppy beer. The hop aroma begins with intense earthiness from the prolific use of English- Style Fuggle hops. There is a depth that includes apricots, peaches, a hint of mango, and a fruity hop character to balance the copious malts. This is carried on to the palate with a smooth, creamy mouthfeel from the flaked barley, making for a very flavorful and very enjoyable beer.

The Goddess Ninkasi inspired the brewery, the ancient city of Babylon inspired the beer. Fruity, hoppy, and nutty. Very strong. 9.1% alc. March 24th, 2013.

Bomber from The Davis Beer Shoppe. Pours hazy amber with an off-white head. Aroma of caramel/toffee with some floral hop. Near full bodied. Flavor is quite unusual. There’s a caramel backbone, but the hop is floral, even herbal. There’s so much hop that it seems to have its own body. But the flavor intensity, while large, has very little "burn". Just a touch. So the NW aspect is way, way muted. It finishes bitter, and very hoppy. Pliny fans may not like this. But to an extent, hop is hop - and there’s a lot in this.

Courtesy of my brother Rick. Pours a cloudy amber with an off-white head and a lot of lacing. Nose of floral hops. Full body. Flavor is floral hops. Bitter finish. Quite easy drinking.

UPDATED: APR 20, 2014 The beer pours to an Amber / golden color toi it. The aroma has a slightly sweet smell to it. The taste is well balanced for an imperial IPA. overall a very good IPA.

Rusty copper. no real head. No lacing. Quite bitter, but not a hop bomb. hop profile lasts on palate for awhile. This is a big ipa.

Draught in a flight. Pours a slightly hazy amber color with a moderate white head on it. Nose is decently hoppy with pine elements coming off of it. Taste is somewhat bitter, but pretty smooth. Decent DIPA, and I’d happily drink it some more.

Ambe rin color, clear with a thin head. Big hops aroma and flavor. Nice malt backing with a good fruit and flroal hops. Very nice Double IPA.

Bottle from Total Wine, Sacramento. Pours cloudy amber with a thick beige head and a sweet molasses aroma. There is a medium-bodied toffee flavor with a bitter citrus finish.

22oz bottle poured into my new Spiegalau ipa glass. Pours an amber color with a thick off white head that leaves decent lacing. Smells of dough, grapefruit, toffee, and caramel. Tastes of all the same things in the smell with a decent hop bite in the back end. Mouthfeel is medium and creamy with good carbonation and a dry finish. Its nice to see something different on the ipa market in the northwest. You can definitely taste the malt forward English style used but then ninkasi added the extra hoppy northwest style element not traditionally used. Very nice.

On tap at Bier One. Hoppy citrus up front with sticky malt sweetness in the background. Bitterness is harsh. Finish is a bit off balance with a strong alcohol burn. A different tasting brew but still tasty.
