We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Bottle from arkadia alko, helsinki. Aroma is sour cherries, salty, sweetness. Hazy dark red-brown color, small white head. Sweet yeasty taste, some sour notes, full body.

Bottle at home. Clear dark amber/brown - offhiwhite head. Dried fruits, Alcoholic, sweetness, oiley, minerals - sake, light flowery notes, toasted, ok malty, roasted, cookies, ok bitterness, orange, light citric, caramel. Some dryness on the finish.

No head, flat as a pancake, dark red beer. Syrupy, nuts, X-mas puddung, even some brandy. Sweet, Syrupy, Yet not cloying. I get indeed a bit of the benzene-like sweetness from a Japanese sake. Alcoholsweetness as well. Very slick, alcoholheat, slight spicy-peppery in the aftertaste. Ultra-sweet, but in a good way.

Thanks to Bernt for the bottle. Hazy rust coloured with a pale head. Aroma is raisins, leather, brown sugar, sandalwood. Slightly woody on the palate, starts sweet but finishes quite dry with noticeable booze. Taste is cedar, raisins, brown sugar, sake, hint of soy sauce. Nice, but not as good as the 3rd edition.

Bottle (25cl) from Vinmonopolet, Oslo. Shortlived cm-thick off-white head, leaves a stable ring, no lacing. Murky rust brown colour. Boozy aroma, barrel-aged character, with oxidized caramel, concentrated fruit (fig, apple, banana), semi-sweet sherry, spices, almonds. Full, viscous body, flat carbonation. Sweet taste, mild bitterness, mild grapefruity acidity, short alcohol burn. Finish is drier, spicy and slightly papery.

DuffMan (7999) - the land of bitumen, beef & beer, Alberta, CANADA - JUL 4, 2014
Small bottle, flashy packaging. Muddy red brown, no head. This edition is not much different from the 3rd edition, to my recollection. Vinous character, slightly sour, is married to heavy chewy malts. Again, I don’t know sakè enough to comment on its influence here, but this is a unique beer. I’m not digging it as much as the 3rd edition (especially for the price), but I’m not sure if it is because this is inferior or because the style doesn’t lend itself to repeated indulgences. Or maybe it’s just my mood.

VastActiv (3951) - Oulu, FINLAND - JUL 11, 2014
Bottle 0.25l at Pikkulintu, Helsinki. Batch nr: 741. Brewed 12/20/2011. Best before: 12/20/2016. Colour is brown with very small bubbly white head. Aromas and flavors: Yeast, dark fruits, raisins, nice balance of sweetness and dryness, hints of alcohol and malts.

Geokkjer (6582) - Kristiansand, NORWAY - OCT 3, 2014
Bottle. Pours deep golden with a tiny off-white head. Aroma of malt, bred, yeast, slight minty note and caramel. Flavor is sweet and malty with some warming notes, caramel, yeast and nuts. Medium to full body, soft carbonation.

25cl bottle at home brewed in 2011. Poured a deep amber colour with a small non to long lasting creamy head. Very sweet aroma, burned caramel, yeast, fruity aroma of ripe apples, plums, red fruit, cherry, some fruity smell in the aroma i can’t place (should be from the sake yeast...) some kind of spiced medical tea herbs, coriander. Leaving a long sweet finish. Very smooth and Silky mouthfeel. But i can say i’m a huge fan of the herbal / fruit notes that are coming from the sake yeast.

Testad på Linköping Beer Expo. Grumlig. Mycket god fruktig doft som inte smaken riktigt lever upp till. Först trevlig sötma men sen en eftersmak som inte faller mig i smaken som drar ner betyget.
