We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

What a gem of a beer, and I have two :-), so one for ’ron. Gobsmacking aroma, blown away by the depth and intensity of the taste. Did pick the alcohol tang at the end and as it warmed up a bit. This is very very nice. Just is. How they do I don’t know, glad they did.

Dobre wspaniale prawie, piwo zblizone do Barley Wine. Swietny aromat rodzynki, alkoholowe cieplo i w smaku nieco ryzowe karmelowe i drozdzowo chmielowe. Finisz przecgodzi ze slodyczy w konkretna taninowa wytrawnosc pozostawiajac rozgrzanie w gardle, alkohol mocno wyczuwalny ale to szlachetne tony smakowe i estry. Rum mi przypominal. Piwo ciemno miedziane bez piany. Wielki plus za opakowane. Mala butelka 25cl owinieta w czerwona bibulke i wlozona do Puszeczki. Bottled on 12. 2011. Polecam do przechowania i degustacji na specjalne dni.

25cl bottle at home. Hazy brown with almost no head. Full complex body with low carbonation. Pretty sweet with some bitter tones. Caramel, malts, floral tones, yeast, dark fruits, warming alcohol, spices and herbs. Great full flavoured brew!

UPDATED: DEC 15, 2015 Hazy, dark orange color with a bit of beige head. Aroma is intense and complex. Dried dates and figs, caramel, pumpkin pie spices, cognac. Taste starts sweet with the dark fruits and brown sugar and gets more balanced, even a bit bitter, in the finish. You can get the high ABV but not pungent or disturbing in any way. Leaves the mouth quite dry, without any alcohol burn. Body feels quite thick but not syrupy or sticky in any way. Has some carbonation, making it dangerously drinkable for 13.5%. I am quite impressed with this one. Really complex, with many layers of flavors ranging from intense, fruity sweetness to a nice, nutty bitterness in the aftertaste.

What a treat (thanks me). The first half of the bottle poured rosewood in colour with excellent clarity and an aggressive white head that quickly dissipated. The aromas came out with vibrant fruity esters, aromas of cherries and fresh flowers. Its mouthfeel was silky, somewhat sweet and generous. Fruity flavours abound with poached pears, cherry tart and fat juicy plums. The finish dwelt on those dessert flavours. A good alternative to port, this one.

Bottle shared with JMD at HNB 01.12.15. Clear, reddish amber. Small beige head. Vinous aroma of old sherry, old white port, sauternes, dried apricot and other dried fruits. Similarly complex taste, balanced with sweetness of dried fruits. Superb!

Bottle at home. Kept for a while in storage. Pours a clear ruby red. no head. Aromas of chocolate, black cherries, cognac. King of Denmark candy. Sour, malted taste. Strong but tasty alcohol. Sake mouth feel. Excellent

UPDATED: DEC 1, 2015 Fra flaske på Cardinaltreff jan-13: kveldens siste, og den var saliggjørende. Minner om en god belgisk tripel - søt, smaksrik og full av fruktige godheter. Og jeg har en flaske i kjelleren! Denne flasken (batch 741, bb. 12/20/16), delt med Ovesen etter vellykket brygging, des-15: klar, rødlig rav med kort skum. Vidunderlig, vinøs, kompleks aroma og smak med toner av portvin, tokayer, sauternes, sviskeplommer og tørkede frukter. "Denne va go’e" sukker Ovesen henført. Jeg er helt enig, lang og myk ettersmak og varme helt ned i lilletåa. Opp fra 3.7 til 4.2!
