We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

What a treat (thanks me). The first half of the bottle poured rosewood in colour with excellent clarity and an aggressive white head that quickly dissipated. The aromas came out with vibrant fruity esters, aromas of cherries and fresh flowers. Its mouthfeel was silky, somewhat sweet and generous. Fruity flavours abound with poached pears, cherry tart and fat juicy plums. The finish dwelt on those dessert flavours. A good alternative to port, this one.

Bottle from Vinmonopolet in Valkendorfsgate, Bergen. Pours a slightly hazy deep copper-hued amber body with a small off-white head. Aroma is complex, pungent and heavy, but very pleasant: jasmine, rose petals, peaches, vanilla, licorice, pine, apricot, hints of pineapple, herbs, wood and alcohol. Truly delicious in its strange, beckoning form. Taste definitely matches the aroma impression: loads of intertwining tastes of licorice, alcohol, vanilla, pine, rose water, peaches and hints of resin and estery pineapple and banana tones in the back. Full body, soft carbonation. A bit too alcoholic at the moment, which I suspect will be smoothed out with a bit of storage. Otherwise an absolutely fantastic sipper and a real original treat from Nøgne Ø. It’s good to see their sake adventures also seep into their beer selection.

0,25l bottle from flagship Alko. Pours hazy golden with a low head. Aroma is malts and sake. Flavor is full malts, sake and hops. Awesome.

Bottle, served in a snifter. 13.5% Batch 741 Brewed 12/20/2011 Best Before 12/20/2016 made with a sake yeast from Nagano. Not the best looking beer, it is a drab muddy brown but in the right light looks a bit better, no head just a few isolated bubbles during the pour. Big aroma, plum, candied fruit, caramel, gingerbread, a bit woodsy, maybe some light tobacco leaf , a brandied toffee? Very complex, reminiscent of a barrel-aged barley wine. Wow, again while you have some booze in the nose and a touch of heat going down your throat it is quite subdued. This has a great flavor: sugary caramel, sweet caramel,nutty, light plums but much more of a tobacco leaf vibe than the 3rd Edition I think... more fresh tobacco leaves than dried. As it warms up that tobacco smokes start to show up - this just keeps getting more and more complex. Less fruitiness, more sugar and malts. Great chewy bready body. This is like a warm friendly hug of a beer, I wish I was having it snug by a fire rather than on a swelteringly hot summer day in Kyoto but damn this shit is good.

.25l bottle from Alko Arkadia Pours cloudy dark orange with low head. Aroma is dried fruits, alcohol, malts, syrup notes, caramel, flowers and some hops. Flavor is caramel, malts, syrup, nutty, some alcohol, plums, dried fruits and dark fruits. Silky palate, alcohol is well hidden. Swell!

In short: a strong sweet ale.
Pours hazy mahogany-copper, with little light tan head.Short head retention, some lacing. Malty, caramel, liquorice and liquor aromas. Medium body, soft carbonation, oily texture. Taste is sweet, malty, caramel, liquor, some subtle sour flavours, but sweetness dominated. Very smooth, balanced and pleasant.

Bottle at Kristiansand Ølrfestival. copper colour with a beige head. aroma is alcohol, dried fruits, malt, sugar. Flavour is alcohol, dried fruits, malt, fruit, sugar, caramel. Full body. Very nice beer.

Nice looking bottle in good looking metal case. Smells like sweet syrup, apricot, clementine and almonds. Taste is very fruity. There is apricot, pineapple, orange, sweet honey. Maybe some hint of spices. As it warms up you can sense some alcohol, but I think it just adds to the taste. This got allot of the qualities of Nøgne Øs sake, and the mouthfeel is almost the same. Like a perfect blend I would say. I would love to eat sushi drinking this. People should have an open mind before drinking this beer though, it’s not for everyone. For me this beer is incredible, unique and very very tasty. The only beers I could compare this with if you think of ABV and fruitiness is Red Horizon 3 and Samichlaus. This is much better than Samichlaus. A must buy if you see this somewhere.

0.25 l bottle from Alko. Dark amber color. Sweet honeyish and fruity aroma with apricot, peach, raisins. Sweet toffeish and fruity taste with raisins, apricot and peach. Full body. Excellent dessert sipper.

Head: Small, creamy/dense, off white/cream coloured
Colour: dark ’redish’ amber
Smell: is amazing ! way better than the 1st edition i had, alcohol is still prominent but isn’t overwhelming and lets through those wonderfull aromas of malt, barley, a slight sourness and somewhat salty ( not like the flavour but more like the smell of the sea or how oysters smell ), slight alcoholic sweetness and also slight touch of fennel
Taste: start is some alcohol with slight notes of peaches and barley, a touch of herbal honey as well, then comes in some medium bitterness, with a nice sweetbitter yeasty flavour, also get hints of caramelised/grilled pineapple and a slight cabbage like earthyness, the end is mainly malt and bitter, bit mouthdrying, aftertaste is dry hay and a couple minutes after comes some rose water.
This one is really good ! way better than 1st ed. now i’m curious about the 3rd edition !
