We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

Bottle 25 cl, BBE 12/20/2016. Pours amber in color with thin bubbly off-white head. Sweet honey, cantaloupe and that sticky hoppyness in aroma. Perhaps that cantaloupe kind of sweetness comes from the sake yeast they used. Sweet in taste at first, some honey and ripe garden fruityness but also a bit of malts is there. Slightly bitter in aftertaste as well, but the sweeter side gains victory here. No sign of the alcohol. Pretty good as a sweet dessert beer.

25 cl bottle @ wPBF’13, bottle #12481. Batch #741: brewed 20.12.2011, BBE 20.12.2016
Vertical with 3. edition.
Aroma has caramel, malty notes and yeast. Also some ripe fruits. Flavour has alcohol, some American hops, raisins and ripe fruits. A bit too sweet but nice anyway. The alcohol cuts the sweetness. Less aggressive and more boozy than 3. edition.

Rating #700!
Wow, this is one special aroma! It’s strong, complex, sweet and has some interesting vinous notes: I want to say it’s the same fruity notes as in sake, but that’s probably because we all know it’s fermented with a sake yeast. There is also a great deal of sweet caramel, and in the back I get some crisp hints of citrus. The taste is really sweet, but the heavy bitterness takes good care of that. Still, this is bordering on being too sweet. The finish is very long-lasting and has a pleasant warming alcohol feel. Both the complex sake-ish fruity notes and the caramel are very present in the succulent flavour profile. There are also hints of some liquorice-like herbal notes in the back (I guess I’m trying to say anise, but it’s far from being as sharp and pronounced). In the glass it looks cloudy, and has a dark brown/copper body with a small head consisting of big bubbles. The head soon reduces to a ring of bubbles that is fully lasting. It doesn’t actually leave much lacing, but it’s quite entertaining to watch this ring bounce up and down as I drink. This RH2 is of course full bodied, the texture is thick and oily, almost syrupy, but the carbonation is a tad too soft for my liking. A very interesting beer, that also is very good!

250ml bottle pours a hazy light brown color with a small white head that leaves no lacing behind. Aroma is light fruits and alcohol with hints of yeast. Taste is a caramel malty sweetness with some light fruity notes and slight alcohol burn in the finish. Medium body and mild carbonation. Very interesting and inviting brew. Highly recommended for a unique tasting experience.

Bottled, 2797th bottle. Looks like raisin juice. The aroma is strong but not that great. The taste is raisins, grapes, honey and with amazingly long finish.

Color caoba turbio con espuma color crema poco duradera. Aromas de fruta confitada, almibar, naranja y licor. En boca es densa y dulce con toques nuevamente de naranja y un final amargo equilibrado y seco. Muy rica.
