We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

Clear brown beer, almost no head. Dense malty nose, caramel, fruit hints. Malty flavor, alcohol warmth, bready notes, more caramel, coconut. Finishes dry with sake-sweetness and wood. The dryness lingers. Interesting stuff. Shared by martjoobolut, thanks!

Bottle. Unclear, dark copper colored body topped by a light beige head made up of very small bubbles. The aroma has a tropical style fruityness as well as sugary notes and alcohol. Hints of cellar-ish caramel. Some higher alcohols, strawberry hints and a faint peppery touch. Sweet on the palate, warming in a pleasant way, with a soft carbonation, and flavors of tropical fruits, sugar and alcohol. Some caramel hints. Warming, sweet and fruity finish. Well, too warming and sweet maybe, but it’s sort of balanced, and I like it quite a lot. 120330

Bottle, at Kristiansand Ølfestival. Looking at my notes from the early sample back in March, I find a beer that’s pretty much the same as back then, only softer, smoother and less alcoholic. It’s still warming on the palate, in a pleasant way, and probably a bit too sweet, but there’s a reason for the small bottle, which by the way is nice to share. There’s lots of fruityness both in the aroma and flavor, obviously a result from the yeast’s work, and towards the end I think of canned fruits in syrup, with a touch of caramel. A nice beer, looking forward to a more thorouth inspection when it’s available in stores. 121013

UPDATED: FEB 18, 2013 Pours a see-through copper colour with almost no head at all. Aroma of alcohol, barley and some candy suger maybe. Flavour is intensely sweet, with tropical fruits, barley and some wood. Really mellow mouthfeel and almost no carbonation at all. Really fruity and smooth.Shoulden’t this be catagorised as a barley wine? A really good beer indeed.

(Bottle, 0.25 l - #12406 - Brewed 20/12/2011 - BBE 20/12/2016, from Alko Arkadia, 20130219) The beer poured reddish dark brown and clear. Its head was small, sparse and white. Aroma had fruitiness, sweetness, vineousness, malts and caramell. Palate was full bodied and warming with medium carbonation. Flavours were malts, caramell, hops, fruitiness, vineousness, sweetness and bitterness. Aftertaste was hoppy, malty, sweet and bitter. My knowledge of Sake is next to nothing so I’m not able to notice the typical characteristics of that drink in this beer. There was somethign non-beer like here and there. But the heavy maltiness and strong hoppiness pushed this drink to the beer side. Still a weird experiment but better than the 1st edition.
