COMMERCIAL DESCRIPTION
We brewed this ale only with the famous sake yeast No. 7 from Masumi Sake in Nagano, Japan. On advice from Masumi’s master brewers we fermented this ale very slowly at low temperatures to bring out No. 7’s fabulously fruity character. This is a beer, but has some flavors found in a sake. A great combination!

Bottle from the Norwegian contingent. Amber pour with a thin ring of off-white foam. Sweet sugary aroma. Vanilla, citrus, sweet red beans, brown sugar, and yeast. Flavor is really sweet and sugary. Brown sugar, citrus, vanilla, and caramel. Yeast, booze, and some vinous character.

Bottle: I have been holding on to this one for a while, pours cloudy orange with no head and some yeasty chunks, aroma is slightly sweet, taste is sweet at first then the sake flavors take over, warming finish from the alcohol. Interesting.

super rich malt nose, with some elegant oxidation/sherry notes. some alcohol as it warms. a bit estery/fruity. slightly hazy medium amber/gold with a hint of a red highlight. the head quickly falls to large bubbled lacing. smooth, smokey, viscous. the alcohol is well masked by the rich body, malt flavors. almost a saltiness to it towards the finish, before some bitterness pokes in. very warming. after two sips, the alcohol is very easy to notice -- but it still doesn’t taste like a 17% beer.

Honey and syrup thickness. Golden orange. Burnt red. No head. Nose is nose is like and English barkeywine. Toffee and figs. Hop bitterness and caramel. Ugh. Tastes terrible. Major boozy and chemical taste. Sweet medicinal finish. Do not buy. Whoa.

Bottle at home, Masumi Plus. Light hazy orange, no head. Aroma heavy of alcohol and malt (caramel, fruits). Flavor medium to heavy sweet, complex (vinous, fruity) etc. Full body, flat.

Bottle sample at Beoir Go Leoir. Sweet butterscotch, dried fruits, and spiced orange, and boozy aroma. Cloudy orange with no head. Sweet caramel, honey, spice orange, strong clove, and hot boozy flavor. Full sticky body, flat carbonation.

Bottled. Almost looks like dark honey, no head. The aroma is very much honey-like, quite identical to some better miod pitny (honey mead) found in Poland. The taste is more like a nordic mead, with freshness of lemons and other citrus. It’s surprisingly sparkly considering the lack of head. The finish could be a bit more exciting, currently it’s more alcohol than fruits.
