COMMERCIAL DESCRIPTION
We brewed this ale only with the famous sake yeast No. 7 from Masumi Sake in Nagano, Japan. On advice from Masumi’s master brewers we fermented this ale very slowly at low temperatures to bring out No. 7’s fabulously fruity character. This is a beer, but has some flavors found in a sake. A great combination!

Unclear medium red orange color with virtually none head. Aroma is moderate to light heavy malty, caramel, sweet, candy, berries, alcohol. Flavor is moderate to heavy sweet and bitter with a long duration. Body is medium, texture is oily, carbonation is soft, finish feel is light to moderate alcoholic. [20100506]

From tap at Mikkeller baren. Pours hazy orange with a fully gone head. Aroma is roasted malty, caramelish and light fruity. Roasted caramelish and fruity flavoured. Sticky sweet and caramelish. Mild burn note. Sweet malty finish with a distinct bitterness burning through. Strange on the yeasty notes.

Draft. A hazy amber beer with no head. The aroma has notes of alcohol, malt, berries, and fruit. The flavor is sweet with notes of malt, alcohol, and fruit.

On tap. Pours a cloudy opaque dark amber with hardly any head. Strange herbal aroma and loadsa booze up the nose. Medium body, completely flat, very fruity and somewhat yeasty and otherwise just heavy booze. Fairly extreme. You definitely get the Sake touch here, but as a beer it’s not really that pleasant. Interesting experiment though. 200910

Draught@Mikkeller Bar. Amber colour, small head. Aroma is mild roasted notes, caramel, fruits as well as quite much alcohol and also mild herbal notes. Flavour is fruits, alcohol, some caramel and some mild herbal notes.

Draught at Mikkeller Bar. Hazy orange coloured with a small off-white head. Fruity aroma of caramel, hops, spices and grass. Sweet flavour of caramel, hops and grass with notes of sugar and alcohol. Hoppy and warming alcoholic finish. Too much alcohol.

UPDATED: OCT 4, 2010 Draught at Mikkeller Bar, Copenhagen. Hazy copper colour, no head. Sugary nose. Super sweet with sugar and artificial sweetener as main flavour components. resiny and inky. A perfect mess, unthinkably sweet, thick syrupy and cloying. Rivals Kefir Milk Beer to be the most revolting things I’ve ever attempted to putin my mouth. My god - this is unbearable, please Nøgne Ø - save your effort to brew real beer instead. (1/1/1/1/1 =0.5) Re-rate, bottled at Stockholm Beer Festival. Where did all the sweetness go? I mean, this is still sweet, but now there is a very interesting grainy biscuity malt tone underneath. The finish is still unpleasantly inky, but it’s nowhere near as bad as I prevoíously thought. Clear amber, no head.

Draft @ Mikkeller Bar, Copenhagen. Pours a slighlty murky orange/brown color with no head. Has a sweetish malty woody caramel aroma. Sweetish warning malty woody flavor with hints of caramel and yeast. Has a sweetish malty woody warming finish.

Cloudy amber color; the medium sized head is short lived. Aroma of malt, quite traditional Barley Wine style, but also a light fruity touch; later, there is a note of grass and honey. The body is well structured, the mouthfeel round, and the flavor very sweet; there is sweet malt and caramel, candi sugar; the alcohol is surely present and evident, but well blended with the malt and contributing to the balance; as expected from this kind of Barley Wines, there is a nutty side; some lingering fruity trace too; the biterness is correctly strong, without excess.
At this degree of alcohol, interesting.

Hazy red-amber color, without head, oily. The aroma is sweet, with malt, and a fruity note that reminds me the Thomas Hardy’s Ale. Full bodied, the mouthfeel is both thick and oily; very good malt flavor, toffee, very sweet; the alcohol is clearly present, drawing a line from the Thomas Hardy’s, maybe too much; indeed there is a light exogenous element that reminds of the sakés; the final is a bit sandy, with traces of sweet nuts, wood and sweet liquorice too. The bitterness is quite high, but it’s a bit lost here.
Josh’ comment about Samichlaus comes to mind, according to which they use alcohol to balance sweetness (or viceversa). It could as well be a Barley Wine; pleasant but indeed still a bit rough. I would not bet on its ageing potential.
