English: Based on a very classically brewed Belgian style tripel with just the one twist that it was fermented with a saison yeast blend. After primary and secondary fermentation on tank for 3 months, the beer was racked into French Sauternes oak barrels and inoculated with brettanomyces and lactobaccillus. After 8 months in the barrel, the beer shows a very charming combination of spicy aromas, earthy notes and the complex tartness added by the wild yeast and bacteria. The body is dry with intense spicy and fruity flavours with clear hints of vanilla and oak.
Ingredients: Barley malt, wheat malt and hops.

Bottle shared at the LCBS 10. Well, unlike my friend Marc, I didn’t get fart out of this beer. I got more orange and fruit flavors. This fact is making me extremely paranoid.....

Aroma is sour, slightly fantome-esque. Funky yeasts, oak, lemon tartness, and lactic milkiness. Taste is milky, lactic, slightly earthy and farty with tons of spices, vanilla, and oak. I get tons of barrel elements out of this, and paired with the milky spices. This is quite interesting. Finish is slick and slightly sour with some alcohol and vanilla.

Flaske: Orange øl med et marginalt lille skumhoved. Kæmpe duft af kanel, lidt træ og en smule æble. Smagen er lag på lag. Igen kanel men også den sødlige smag fra sauterne blander sig med gæren fra baseøllen. Slutter med et meget bittert bid der virkelig gør det til en interessant ting.

Bottle, courtesy of Beeranarchist. Orange pour, small white foam. Aroma of earth, bacteria, fungi (Brett!), barnyard, a little leather and barnyard. Taste is moderately sour, only a little sweetness. Much funkiness and earth, coupled with a little citrus and some flowers. Low carbonation, big body, long duration.

Aroma is brett, earthy, sour apples, leather, honey, lactic, grapes, wine barrel aging really shines through. Taste is sweet and sour, oak, white wine, brett, honey, tripel yeast, really nice and complex.

Bottle (33cl) from Ølbutikken, Copenhagen. Small offwhite head with coarse bubbles. Deep copper/amber colour, slightly hazy (yeast sediments in final pouring). Wonderfully complex aroma, quite sweet (caramel/fig/raisin, sauternes wine, alcohol) yet distinctly acidic (apple juice, grapefruit, dry sherry). Brett yeast adds a third dimension. All elements are nicely balanced. Full bodied, average carbonation. Finishes with a lasting dry sherry aftertaste.

Bottled@PBF2010. Slightly hazy goldeny amber colour with small white head. Aroma is wood, vanilla, quite white wine like notes as well as some earthy and red berryish notes. Flavour is quite much the same along with some spicyness.

Bottled, from Systembolaget Regeringsgatan, Stockholm. Hazy bronze colour, small head. Oaky buttery nose. Sweet and full bodied with some funky tartness. Deep, soft buttery malt with evident pppery alcohol and a highly complex array of flavours. There is so much going on that it takes an evening to explore it. Feels well balanced amidst this complexity, though perhaps a bit too sweet. Simply fantastic beer.

Bottle 33 cl. Clear amber golden with no head. Amazing barrel aroma, lots of vanilla and some alcohol. Full-bodied, a little low in carbonation, very fruity while the usual Tripel yeast is very downplayed. Tart and fresh again with lots of wood in the flavour. A very delicately composed beer. 080510
