COMMERCIAL DESCRIPTION
44% Ale, 33% Ale aged in oak, 20% in Bourbon and 3% in Wine Bottles - A Method of brewing based on isolating first principals and making pronounced through pilot brewing the desired elements that contribute to the overall flavor. A Golden Ale created by blending the final recipe with its own barrel aged pilot beers fermented with wild yeasts. Each individual barrel contributes a unique flavor from the wood chosen and the cultures resident to achieve subtle complexities that develop(ed) over time. A beer which starts sweet, filling the mouth with fruit-like esters and a mild spiciness, changing to a tart and lingering flavor reminiscent of grapefruit living amidst an earthy, citrusy hop aroma. Define flavor for yourself in this constantly evolving liquid expression.

Bottled. An unclear dark amber beer with no head. The aroma has notes of citrus fruits, malt, bourbon, and brettnomyces. The flavor is sweet with notes of brettanomyces, wood, bourbon, over ripe fruits, and caramel, leading to a dry alcoholic finish.

Bottle 75 cl. Pours a cloudy amber with a tiny, rough off-white head. Nose has slightly tart, overripe fruit, some caramel as well. Medium body, completely flat, tart, boozy, caramellish - and nothing much more. Perhaps a whiff of wood. Rather sloppy and poor really. 250213

thanks jtclockwork for sharing–750ml bottle-pours a foamy off white head and hazy gold color. Aroma is light/medium fruit, yeast, light/medium malt, oak/tart grape. Taste is wild yeast, tart grape, light/medium malt, secondary earthy/spice hops. Dry finish. Nicely done, occasional/interesting.

Very hazy deep amber beer, good white head. Palate starts a little crisp but quickly turns softer. Tangy and slightly tart citrus. Sofy oaky malt with a trace of vanilla. The bourbon provides extra depth and surprisingly the small of wine barrel is noticeable, chardonnay like. Finishes semi dry with a little honey - orange. Very complex beer with lots going on but great balance. Tasty and constantly interesting.
