A Quadruple Ale brewed with a blend of Belgian ale yeast and our house ale yeast. Woodcut No. 5 presents a rich, spicy, dried fruit essence and a deep auburn color. Aggressive vanilla notes from the new American oak compliments the Special B malt with hints of cherry, raison and plumb on the palate. Each Woodcut offering is truly limited edition beer with a unique flavor that comes from select hops, fine malted barley, and our brewers’ careful aging process. Enjoy.

750ml bottle #7852 1/6/12 (Courtesy or RSRIZZO)-48° in Trappist Glass-Pours a murky brown with no head. Aroma of dried fruits, yeast, caramel, and oak. Taste of the same with more dried fruit and sweetness. This full bodied brew is not bad but not one of my favorites for the Woodcut series.

Bottle @ Danish Summer Gathering, Ulfborg 2011. Bottle froma trade with tytoanderso. Many thanks Tyler ! Dark copper color, with a slight haze, tiny brown head that disappears very quickly. Intense sweet malt aroma, ripe fruit,caramel,oak. Flavour is again sweet malty, with lots of fruit,oak, burnt sugar and I can taste the alcohol much more than I would have expected judging from the nose. A very nice brew who would probably benefit from a coupel years of aging.

June 2011 dated bottle poured a hazy orange with a fair tan head. Aroma is complex. The oak hit me first, and then dark fruits with some vanilla and spices. Some reddish-brown residue at the bottom of the glass. This was perfect for dinner the day after Christmas, shared with my nephew from NJ, who hadn’t seen this one before, either. A well crafted Belgian quad. The only negative is the price.

Bottle at GABF and another from a trade. Pours with a murky golden-orange hued body with an off-white head. Aromas are of honey, oak, lots of esters and caramel. Medium wood presence, some nice vanillin. Dark fruits. Flavors are spicy, a bit of sugar (like unfermented wort), bready, oaky and yeasty with dark fruits. Medium to high alcohol felt. Tannins on the finish.

Hazy amber pour with a dense head. A brightly sweet aroma with candy, yeast and fruit. Flavor has a distinct wood note but not overpowering. Raisins, a bit of yeast, and so other dark fruit blend. Medium body. Boozy. Ok.

750 ml corked and caged bottle poured a clear reddish amber with a lingering ring of amber foam (nearly flat they been taking lessons from Tomme Arthur?). Aromas of oak, cherry, toffee, raisin and light vanilla. Palate was light to medium bodied and smooth (translation: flat). Flavors of oak, raisin, cherry, toffee and light carmel with a smooth lingering fruity finish.

Thanks to Ryan for sharing this one. Pours amber with red highlights and an off-white head. Nose is plenty of oak with some raisin, some plum, some malt, wood, and vanilla. Flavor is similar- wood, vanilla, caramel, sugar, and raisin. Lots of oak in this one: it reminds me of a double red where the oak has softened and conquered much of the hop presence. Medium in body and a lingering malty oak finish.

750ml Bottle: Got in trade from phaleslu; THANKS Peter! Aroma of Bourbon, caramel, oak, raisin, slight yeast, vanilla, slight coconut, and dark ripe fruit. Poured deep amber in color with no head at all. Totally flat. Hazy. Flavor is medium sweet and lightly bitter. Tastes of malt, wood, Bourbon, vanilla, water, and some caramel. Medium body. Watery, flat texture. Zero carbonation. Malt, wood, Bourbon, vanilla, water finish is flat. 11.3%ABV is not present.

Deep burnt orange pour with a small head. Aroma of wood, light ripe fruit, yeast and light sweet malt. Sweet fruity flavor. Pretty good.
