COMMERCIAL DESCRIPTION
Celtic brewers used caramel malts and roasted barley to impart a deep red color and rich malty flavour to their ales. Starting with this historical style, we worked for over two years developing and perfecting our 21st Century version. After countless tastings and adjustments, we arrived at O’Dempsey’s Big Red. It’s Big. It’s Red. An Irish-Style Red Ale with a North American attitude. All the body you want with just the right amount of hoppy goodness. Enjoy.

Pours a clear deep red-brown with a minimal off-white head. Aroma of caramel, some chocolate, and fruit. Flavor of caramel malts with some citrus hops with a slightly bitter finish. A little thin and watery on the finish, but it is very drinkable.

Cloudy red-caramel color, thin off-white head. Light aromas of caramel, bread and baking spice. A little thin on a medium-bodied palate. Good effervescence. Candy/caramel flavor with a hint of metal close to the finish, which is medium-long. Above-average.

12 oz bottle, quite a dark ruby pour, a little lacing, I’m not getting much of an aroma, no hops, no malt, nothing, boring. First sip is watery, not sweet, not bitter, not hippy. Boring.

12oz bottle, unknown date. Like the IPA, this pours relatively thick, murky, and hazy, reddish/copper color with a small one finger tan head that leaves some light lacing and holds a small cap. Aroma is heavy on caramel malt, sweet bread, brown sugar, some dark fruit notes, light chocolate, toffee, good strength. Flavor features caramel malts, biscuits and sweet bread, a little dark fruit, some citrus hops for balance, finishes semi-sweet and a bit watery. Mouthfeel is medium bodied, low to medium carbonation. Pretty darned good Red Ale, the aroma in particular is my favorite part.

10/2/10. 12oz bottle. Chocolate and roasty aroma and chocolate flavor as well. Not great, but better than the ipa.

Smells malty and sweet. Looks a deep amber red and pours with a nice frothy head that lingers a couple of minutes or so. The flavor is quite good at first, though it might get old before long. Crisp, somewhat subtly hoppy finish. Overall, I am pleasantly surprised with this Irish Red.

I’ll call it a copper pour with a frothy off-white head. Aroma is all malt with an overall earthy aroma. Nice malty flavor with some caramel, bread and some toasted cereal malts. Finish is crisp and has a lingering malty aftertaste. Pretty good.

Bottle. Made quite the pop when I opened it. Pours reddish amber with a very big off white head. Aroma is earthy, caramel, roasty malt with a spicy hops edge to it. Flavor begins sweet and slightly spicy, finishes almost like a dry stout. Some metallic notes. Good balance. Body is fizzy and a bit on the thin side.

Bottle, nice deep red pour with a tiny white, faded to a thin collar quickly. Aroma was nice and rich caramel malts, some sweetness, and a bit of roastiness. Flavors are straight up malty, lots of caramel malts give it a bit of sweetness although it finishes with a nice hop bitterness. Mouthfeel was decent, not watery thin but not as full as I may have liked. Not a bad local red.

From an old tasting note. On tap at the brewery/restaurant. Deep red pour. Roasted malt aroma. Taste - sweet malt, caramel, earth. Nice medium texture.
