Celtic brewers used caramel malts and roasted barley to impart a deep red color and rich malty flavour to their ales. Starting with this historical style, we worked for over two years developing and perfecting our 21st Century version. After countless tastings and adjustments, we arrived at O’Dempsey’s Big Red. It’s Big. It’s Red. An Irish-Style Red Ale with a North American attitude. All the body you want with just the right amount of hoppy goodness. Enjoy.

Tap @ TacoMac, John’s Creek. Dark copper color, light tan head. Slight bubblegum aroma. Big flavors of toasted malts, honey & molasses. Finishes with a nutty granola character. There is also an earthy honey flavor. Smooth and creamy texture.

A deep red pour with tiny cream head. Roasted scent of malts dominates. This stuff is very tasty and just enough bite. I will get more.

16 ounce pint - $5.25 at Taco Mac in Kennesaw, Georgia. Appearance: Pours from the wall-o-taps a clear, reddish-amber body with a scant, white head. Smell: A scent of toasted bread crusts and burnt sugars with a pervasive, though light waft of harvested berries and some background, minuscule notes of earthy herbs and spice. Taste: Toasty, bready maltiness with a sweet flourish of caramelized sugars. Hint of berry-esque fruitiness. Modestly earthy hops with an additional zip of complimentary spiciness. Medium-low bitterness. Smattering of fruitiness on the bittersweet, drying finish. Mouthfeel: Hovers comfortably around medium-bodied. Medium-low carbonation. Drinkability: A smooth, pleasant brew to pair with watching the Masters this past weekend. Best of luck to Dempsey and here’s looking forward to his forthcoming RIS and IPA.

12oz bottle. a clear red beer under a medium sized, frothy, beige head. aroma of sweet caramel malt, lots of juicy red fruits(apples, pears), and maybe even a hint of toast. nailed it...the flavor is a full of the toasty caramel malt blended with lots of refreshing fruit esters and yeast. i keep imagining there is a tiny hint of cinnamon. mostly creamy palate. medium body. i have been very impressed with ABC lately. that re-incarnated laughing skull was awesome too.

Very clear, but very dark ruby. Served with a large faded khaki head. Thick foam holds craters from larger burst bubbles for a while. Crisp hops in the flavor. Some candy caramel flavors but not really a sweet beer. Greay balance of flavors without being bland.

Draft at Prado. Poured a dark clearish red, with a white head, and some lacing. Aroma is malty and a little roasty. Taste is is similarly dominated by malt, with some bready and roasted notes. A slightly bitter finish gives the beer a little hop to balance. Mouth is pretty well carbonated and medium bodied. Overall, a decent ale.

Draft pint at the Prado brewpub. Very dark red with a head that’s a bit watery. This packs a nice aroma of roasted malt and the first taste follows suit. Sweet and malty, his has a solid caramel character. Bit thin. (#3722, 10/26/2009)
