COMMERCIAL DESCRIPTION
Celtic brewers used caramel malts and roasted barley to impart a deep red color and rich malty flavour to their ales. Starting with this historical style, we worked for over two years developing and perfecting our 21st Century version. After countless tastings and adjustments, we arrived at O’Dempsey’s Big Red. It’s Big. It’s Red. An Irish-Style Red Ale with a North American attitude. All the body you want with just the right amount of hoppy goodness. Enjoy.

From an old tasting note. On tap at the brewery/restaurant. Deep red pour. Roasted malt aroma. Taste - sweet malt, caramel, earth. Nice medium texture.

Bottle from Hop City. Pours a deep, dark red with a ring of a white head. The aroma is creamy with gentle hops. Pretty tame and balanced, but tastefully sweet and pleasing. The flavor is also accessible. I find even the 30 ibu’s to be questionable, it’s so malty and smooth. Hints of vanilla, biscuits, licorice, and grass are here. It’s accessible and easy to drink without sacrificing flavor.

Pours a deep dark red. Lots of caramel and a little candi sugar. A touch of nuttiness and a littl further down the sip you get some cocoa flavors. Candy sugar aroma. Finish is a touch of bitter hips. Decent.

Pours reddish amber with a very big off white head. Aroma is earthy, caramel, roasty malt with a spicy hops edge to it. Flavor begins sweet and slightly spicy, finishes almost like a dry stout. Some metallic notes. Good balance. Body is fizzy and a bit on the thin side.

Clear dark cherry amber color with a bubbly off-white head, streaks and dots of lace. Taste semi-sweet caramel malt that grows into bread and dates as it moves to an oily carbonated finish. Loads of flavor, not always in harmony with each other. Good, not great.

12oz bottle, unknown date but recently acquired, served in a pint glass. Pours a fine looking deep red-brown, clear, with a tan head: moderate size with very good retention and lacing. Aroma: roasted and caramel malt with some spicy hops. Hints of dark fruits. The flavor follows, although it is stronger and richer than the nose suggests, with a bit darker roast in the malt mix. Only a faint suggestion of dark fruit. finishes semi-sweet and a bit watery. Mouthfeel: medium bodied, medium-high carbonation O: quite good and tasty Irish Red Ale. Recommended.

Bottle. Big huge nose of diacetyl and diaper. Pours a dark red to brown. Flavor is awful and full of butter, sewar, and burnt rubber. I hope for everyone’s sake I got a bad bottle.
