For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it’s thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Tap at The Chicago Diner. Cloudy golden with white head. Apricots, lots of milky dough and spicy yeast with cloves and cardamom. A bit sugary as well, and some herbs in the finish. Medium sweet and bitter. Medium bodied with creamy feel and a bit fizzy carbonation. Nice beer but a lot of yeast

Hazy yellow with a white head. Funk, earth, herbals, citrus, and barnyard. Great palate, barnyard funk, damp basement, citrus, earth and spice.

Hazy yellow with a large, sudsy, white head. The aroma is has some earthy spice, phenol, and lemon zest. The flavor is nice as well. Some sweet, crackery malt with more fruit than the aroma has. There is a bit of balancing bitterness on the dry finish. Nice

A near perfect saison. Nice phenolic notes of pepper with some bubblegum hits from the yeast. The hops are light but present in the flavor. A traditional saison done right.
