COMMERCIAL DESCRIPTION
For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it’s thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Bottle from The Barrel in Charleston. Super, super interesting. Pours a hazy, dirty not-quite-golden with a short lived white head. Earth, yeast, green grape and grain all upfront. Nice citrus notes and green apple in the back keep in from being too sweet. Finishes really crisp. Nice and funky. Eminently enjoyable.

Bottle. A hazy straw pour with a thick off-white head. The tart & tangy aroma features some lemons, oranges, green grapes, Golden Delicious apples, pears, zesty citrus rinds, faint bubblegum, wheat, and a funky yeastiness. Medium-bodied and kinda creamy on the way down. Crackery upfront in the taste with some grainy sweetness. Wheaty. Pears and apples. Tangy at the end with some citrus rinds and a yeasty funk. Not bad.

Pour out of 12 oz bottle, clear golden pour with white head aroma brought tart lemon, white grape, touch of pear into some white pepper, touch of biscuit, hints of grain into a bit of slight oak. Taste was a mix of bread, cracker, vanilla into a bit of yeast, white grape, lemon, some pear, peach into a bit of slight tart fruit, finishing slightly dry.

UPDATED: MAR 31, 2015 Single Bottle from Whole Foods, Darien. Pale, hazy straw color in glass, under a spongy head. Smell has a touch of funk, but not sourness, more a bit of orange and pineapple, with fresh cut grass in the back. Taste has a bit of tartness, but an enjoyable presence of what seems to be wheat malt. A hefeweizen with saison yeast robbing it of the usual bubblegum or clove flavors. A slight edge of lemongrass on the sides of the tongue. Spritzy and easy to just swig down once you get started. Then there a note of clove toward the very end. Definitely a beer I should get more of for when it?s hot and can sit on the patio grilling. Soon, very soon.

Bottle to Goblet. Aroma is slightly like hay, otherwise hard to place. Appearance is golden and cloudy but not silty at all. Very slight head, but it leaves some nice lacing as you drink it down the glass. Flavor is pleasant with a hint of hoppiness but it’s pretty mild. Very soft carbonation, not quite flat. Overall expected the flavor to be a bit more forward, and there is not much follow up beyond the lingering alcohol on the tongue. Not a bad beer but kind of underwhelming.
